Baked Meatballs in Tomato Cheese Sauce






Ingredients

500g Minced Beef
Half a Yellow Onion, minced
50g Cheddar Cheese, shredded
Pepper to taste

For the Sauce

2 tbs olive oil
1 onion, peeled and finely chopped
1 garlic clove, peeled and finely chopped
120ml dry white wine
2 x 400g tins chopped tomatoes
100ml water
1-2 tbs caster sugar
50g Cheddar Cheese
sea salt and black pepper
Method

1. Mix the Meatballs ingredients together
2. Shape them into 5 cm diameter balls and place on baking tray lined with baking paper
3. Pre-heat oven to 200 degrees c
4. Bake for 22 mins
5. Heat the olive oil in a frying pan, add the onion and garlic and fry gently until lightly golden.
6. Increase the heat slightly and pour in the wine.
7. Let it bubble until reduced by half, then stir in the chopped tomatoes, water and sugar.
8. Simmer for 10-15 minutes, until the tomatoes are soft, then remove the pan from the heat, mix in cheese and stir well.
9. Mix in the cooked meatballs.

Tuna Tomato Penne Pasta


















Ingredients
200g Penne Pasta
Block of Parmesan Cheese
1 tbsp Salt
Extra Vrgin olive oil
1 can Tuna Flakes, drained
Mayo
Pepper to taste 
For Sauce
Oil from the can of tuna
2 tbsp Extra Virgin Olive Oil
4 cloves Garlic, mince finely
20 Cherry Tomatoes, quartered
 
Method
1. Boil a pot of water and dump in 1 tbsp Salt and some drops of Extra Virgin Olive Oil
2. Once boiled, throw in Penne and boil for 10 to 12 mins or depending on your choice of done-ness. 
3. In a Pan, heat up Extra Virgin Olive Oil and stir fry garlic. Add in the oil from tuna.
4. Add cherry tomatoes and stir for 5 mins, making sure all the tomatoes are soft and mushy. 
5. Once Penne is done, drain and dump into the sauce.
6. Mix well in the pan and throw in half of the chopped Parsley.
7. Plate your Penne and scatter half of the chopped Parsley all over.
8. Grate Parmesan Cheese on top.
9. Mix tuna and mayo to your pref consistency and season with pepper.
10. Serve tuna mayo with pasta

Herring Tomato Salad


















Ingredients

15 Cherry Tomatoes
Smoked Herring with brine

Method

1. Halve the cherry tomatoes 
2. Mix the brine with the tomatoes
3. Arrange tomatoes in a plate and add in Herring fillets, sliced
4. Enjoy!

Tomato Basil Salad


















Ingredients

2 Big Tomatoes, Diced
5 Basil Leaves, Chopped
Drizzle of Extra Virgin Olive Oil (Depends on your taste. Add more or less to your taste)
Pepper

Method

1. Mix Tomatoes and Basil leaves in a salad bowl
2. Drizzle in Extra Virgin Olive Oil and mix well.
3. Season with black pepper
4. Enjoy!

Tomato Soup

















Ingredients

3 Large Tomatoes, chopped
1 Stalk Celery, chopped
2 Carrots, chopped
1 Onion, Chopped
2 Cloves garlic, Chopped
1 Can Whole Tomatoes (411g size) 
500ml Vegetable or Chicken stock
Handful Basil Leaves
Extra Virgin Olive Oil
Salt and pepper

Method

1. Heat up a pot, add in oil, follow by garlic, onion, carrots and celery
2. Cook for around 10 minutes until the carrots have softened but are still holding their shape, and the onion is lightly golden. 
3. Add in stock and both fresh and can tomatoes.
4. Bring to a boil and let simmer for 10 minutes.
5. Off the heat and add in basil.
6. Using a blender, blend all into a thick soup and season with salt and pepper.
7. Enjoy!

Angel hair in Tomato and Basil Ragu


















Ingredients


500g Angel Hair pasta 
500g Sausages, casings removed and coarsely chopped

Olive oil
300g sliced mushrooms
1 Red onion, chopped
1/2 Cup chopped fresh basil
1/2 Cup chopped fresh oregano
3 Cloves of garlic, chopped
1/2 Cup white wine
1 Can tomatoes puree
3 Cups diced fresh tomatoes 

Salt and pepper
1/2 cup grated parmesan cheese


Method

1. Heat some olive oil in large pot; add onion and cook until just browned, about 5 minutes. 

2. Add the sausage and mushrooms and cook until sausage is nearly done (about 8-10 minutes). 
3. Stir in chopped basil, oregano, and garlic; cook for 1 minute. 
4. Add wine; cook for another 3-4 minutes. 
5. Add tomatoes puree; cover and simmer over medium heat until thickened, about 15 minutes. 
6. Add diced tomatoes continue to simmer, stirring frequently, about another 10-15 minutes.
7. Season with salt and pepper. 
8. Cook pasta according to package directions. 
9. Add ragu to cooked pasta and stir in the cheese.

Mediterranean Tomato Salad

















Ingredients

15 Cherry Tomatoes
1 Pkt cubed Feta Cheese (If you cant find, use normal Cheddar Cheese)
Extra Virgin Olive Oil
5 cloves Garlic, thinliy sliced
Few sprigs of Flat Leaf Parsley

Method

1. In a 330 ml bottle (I use bottles of drinks with cap), put in Garlic and fill up with Extra Virgin Olive Oil to make Garlic infused olive oil. (This can keep in the fridge for up to a month)
2. Half the cherry tomatoes
3. Chop up the flat leaf parsley.
4. In a salad bowl, mix tomatoes, feta cheese and flat leaf parsley with generous lugs of Garlic infused olive oil.
5. Enjoy!
