Bake Salmon Steaks with Courgettes

















Ingredient

2 Salmon Steaks
1 Courgette, Sliced thickly
Salt and Pepper to taste
Extra Virgin Olive Oil

Method

1. Preheat oevn to 200 degrees C
2. Drizzle oil in pan and toss courgette to coat
3. Season with salt and pepper
4. Season both sides of salmon with salt and pepper
5. Place salmon above courgette and bake for 20 mins
6. Enjoy!

Baked Saba over Dry Egg Noodles

















Ingredient

1 Mackerel (saba) fillets 
1 Pc Egg Noodles 
Extra Virgin Olive oil
Pinch Sea salt and black pepper
1 Lemon, cut to wedges

Sauce 

1 Tbsp of fried shallot oil
1 Tsp of light soy sauce
1 Tsp of oyster sauce
1/2 Tsp of dark soy sauce

1/2 Tsp of sambal chili paste 

Method

1. Using your hands, spread drops of extra virgin olive oil over the mackerel skin. 
2. Season the skin only with Sea salt and freshly cracked black pepper.
3. Place mackerel fillets skin side up on a roasting pan.
4. Bake the fillets at preheated oven of 200°C for 10 minutes. 
5. Cook the egg noodles according to instructions and toss them in the sauce. 
6. Arrange the noodles and arrange sliced Saba on top.
7. Before serving. squeeze lemon juice over the hot crackling skin. 
8. Enjoy!

Bake New Zealand Baby Salmon Steaks

















Ingredients

2 New Zealand Baby Salmon Steaks (Or normal if you can't get baby salmon) 
1 Carrot, cut to bite sizes
1 Courgette, cut to bite sizes
Half a lemon
Salt and Pepper
Extra Virgin Olive Oil

Method

1. Preheat oven to 200 Degrees C
2. In a roasting Pan, drizzle Extra Virgin Olive Oil and season with Salt and Pepper
3. Add carrots and courgette, mix to coat 
4. Pat dry salmon steak and lay in roasting pan
5. Drizzle salmon with Extra Virgin Olive Oil and season with Salt and Pepper
6. Bake for 20 mins
7. Enjoy with a drizzle of lemon juice!

Bake Pork Meatballs with Streaky Bacon


















Ingredients

250g Minced Pork
1 Onion, minced
1 Clove garlic, minced
1 Sprig Rosemary, leaves roughly chopped
1 Egg
8 Slices Bacon (4 Slices thinly minced for meatballs, 4 slice for baking with meatballs)
1 Slice bread, chop to cubes soak in 3 Tbsp Milk
Pepper to taste

Method 

1. Mix all ingredients together and marinade for 1 hour
2. Roll them into meatballs. Preheat Oven to 180 Degrees.
3. Cut up 4 slices of bacon into 1 cm square
4. Lay bacon slices  in a baking tray
5. Place 1 meatball over every bacon slice
6. Bake in oven for 15 mins
7. Enjoy!

Ingredient

2 Mackerel (saba) fillets 
Extra Virgin Olive oil

Bake Black Pepper Fish Fillet with Taro

















Ingredients

2 Fillets of Red Snapper or any White Firm Fish
200g Taro, cut to 1cm cubes
1 Red Onion, thinly sliced
Few Sprigs of Cilantro, finely chopped
Black Pepper Sauce (I use Singlong Brand)
Olive Oil
Pepper

Method

1. Oil a roasting pan, toss the taro and pepper together
2. Arrange taro on one side of the pan, and lay fish fillets on another side
3. Apply black pepper sauce on both sides of fillets
4. Arrange red onion slices over the fillets
5. Pre-heat oven to 200 Degrees C
6. Bake for 25 mins
7. Before serving, sprinkle cilantro over the fish for that extra fragrance and colour

Hotdog and Crabstick Croissant

















Ingredient

1 packet of frozen ready made Puff Pastry
Some Hotdog Cocktail
Some Crabstick
1 Egg
Flour for dusting

Method

1. De-frost the puff pastry and roll out to 1cm thickness, preferbaly in a rectangle shape
2. Cut the pastry in long triangle shapes
3. Start with the base of the triangle, put hotdog cocktail or crabstick, roll the puff pastry
4. At the end, the sharp point of the triangle will be on top.
5. Break the egg and use it as egg wash and brush over the pastry.
6. Bake in the oven as per the temperature stated on the packaging
7. Enjoy!

Shepherd's Pie

Shepherd's pie is something which i love alot. i used to have it at Canadian Pizza whenever we order pizza delivery. Since My wife also love this, i decided to trawl the net for recipe for experiment. One day, i saw this show Good Eats on Food Network by Alton Brown. This guy is top notch. All his recipes are really Good Eats. 

So, for my pie ... ... thanks to recipe from Mr Brown, 

Ingredients

For the potatoes:

1 1/2 pounds russet potatoes
1/4 cup half-and-half (One cup of evaporated milk may also be substituted for each cup of half-and-half cream.)
2 ounces unsalted butter
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 egg yolk
 
For the meat filling:

2 tablespoons canola oil
1 cup chopped onion
2 carrots, peeled and diced small
2 cloves garlic, minced
1 1/2 pounds ground lamb
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons all-purpose flour
2 teaspoons tomato paste
1 cup chicken broth
1 teaspoon Worcestershire sauce
2 teaspoons freshly chopped rosemary leaves
1 teaspoon freshly chopped thyme leaves
1/2 cup fresh or frozen corn kernels
1/2 cup fresh or frozen English peas
 
Method

1. Peel the potatoes and cut into 1/2-inch dice.
2. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil
3. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes.
4. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. 
5. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth.
6. Stir in the yolk until well combined.

7. Preheat the oven to 400 degrees F.

8. While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch saute pan and set over medium high heat. 
9. Once the oil shimmers, add the onion and carrots and saute just until they begin to take on color, approximately 3 to 4 minutes. 
10. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. 
11. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. 
12. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. 
13. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
14. Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. 
15. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. 
16. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. 
17. Remove to a cooling rack for at least 15 minutes before serving.

Baked Luncheon Meat, Cheese and Scramble Egg Sandwich



































This is a lazy Man's sandwich. Its so simple to make and assemble and its perfect for days which you simply are too lazy to make anything when you are hungry. And what's better then having luncheon meat sanwiches nicely baked with melted cheese and scramble eggs?

Ingredients

4 Slices of Luncheon Meat (Cut into Half Moon shape)
4 Slices of sandwich loaf
1 Egg
2 Slices of Cheese
Knob of Butter
Splash of Milk

Method

1. Pan fry the luncheon meat till crispy
2. Using the same pan, scramble 1 egg with knob of butter and splash of milk
3. Arrange the luncheon meat, scramble egg and cheese on the bread
4. Slice the bread into triangles (See Photo)
5. Wrap the sandwiches in aluminum foil
6. Place the sandwiches into a Pre-heated 180 degrees oven for 5 minutes
7. Enjoy!

Cinnamon Butter Cookies

















I love cookies, just that i haven't found any recipe that's so easy to make. This is such a fool-proof recipe, i think even a 5 year old can bake. If you do not like Cinnamon, just omit it from the recipe! If you like other spice, feel free to replace with same quantity of your favourite spice. (You may even want to add savoury herbs like Rosemary)

Ingredients

225g butter, softened
110g caster sugar
275g plain flour
1 teaspoon Cinnamon

Method

1. Preheat the oven to 170°C
2. Cream the butter in a large bowl until soft.
3. Add the sugar and beat until the mixture is light and fluffy.
4. Sift in the flour and cinnamon and form a dough.
5. Using your hands, roll the dough into balls and place them slightly apart on a baking tray and bake in the oven for 14 minutes.
6. Enjoy!
