Home made Dark Chocolate Ice Cream



















Ingredients

200ml Whipping Cream
100ml Fresh Milk
55g Cooking Chocolate Chips
1 tablespoon Sugar or to taste

Method

1. Prepare a pot of water and let it simmer.
2. Place whipping cream and fresh milk in a smaller pot.
3. Put the smaller pot over the simmering water and warm the cream and milk.
4. Add the chocolate chips into the warm milk and melt it, while still hold it over the simmering water.
5. Keep stirring till all chocolate chips are melted and blended in with the milk.
6. Add sugar to taste and melt it.
7. It will now look like thick chocolate milk.
8. Pour the chocolate milk to your freezing ware.
9. Cool it before freezing.
10. Enjoy!

Chocolate Chip Cookies



















Ingredients

125g Butter

1/2 tsp Vanilla extract
60g Caster sugar
60g Light Muscovado
1 Egg
150g Plain flour
1/2 tsp Baking soda
200g Chocolate chips

Method 
1. Beat soft butter, vanilla extract, both sugar and egg in a bowl till well mixed
2. Fold in (Do not beat or whisk) flour and baking soda. Fold in chocolate chips.
3. Spoon tablespoon of cookie mixture onto tray (See Picture).
4. Bake in preheated oven of 180°C for 15 minutes. 
5. Enjoy!

Chocolate Éclair






















Ingredients


Chocolate


100ml double cream 
a knob of unsalted butter
100g good quality dark chocolate, broken into small pieces
a pinch sea salt


Choux Pastry

1 Cup Water
114g Butter
1 Cup Flour
4 Eggs

Method

1. Preheat your oven to 220 Deg C.
2. Boil the water and butter in a saucepan.  When the mixture is boiling, turn off the heat and immediately pour the flour in and stir.     
3. Stir the mix until all the flour is absorbed and the mixture doesn't stick to the sides of the saucepan.
4. Mix one egg at a time into the mix.  Make sure that the egg is incorporated into the mix before adding a new one. The mixture is hot, so to prevent the eggs from cooking/curdling, you'll have to mix each egg into the mix fast.  
5. Once the eggs go into the mix, and you get a lovely, smooth, shiny mix, just put the mix into a pipping bag and pipe the mix into the size and shape of the puff pastry you want. 
6. Pipe them onto prepared baking sheets lined with baking parchment paper.  
7. Bake for 20 mins.
8. In the meantime, prepare the chocolate. 
9. Heat up the cream till sides are bubbling.
10. Put chocolate in a bowl, pour cream into bowl.
11. Mix well and keep chill
12. Once chilled, slit the pastry and fill the cavity with chocolate
13. Apply a layer of chocolate on the top

Chocolate Cream Puff




















Ingredients

Choux Pastry

1 Cup Water
114g Butter
1 Cup Flour
4 Eggs

Chocolate Cream

240ml Whipping Cream
1/2 Tsp Vanilla Extract
2 Tbsp Cocoa Powder
2 Tbsp Sugar 

Method

1. Preheat your oven to 220 Deg C.

8. In the meantime, prepare the chocolate cream. Mix all ingredients in a bowl.
9. Refrigerate for 30 mins
10. Once Choux Pastry done, let them cool. 
11. Cut a slit to create a cavity in each puff.
12. Whip the Chocolate cream till it thickens and pipe them into the puff cavity.
13. Enjoy!

Maltesers Chocolate Cupcake




































Ingredients (makes 1 Dozen)

250g Butter, room temperature
150g Caster sugar
4 Eggs
200g Self-rising flour
1 packet Maltesers
2 Tbsp Cocoa powder 
Rainbow rice 

Method

1. Preheat the oven to 180C. 
2. Put the butter and sugar in a mixing bowl, and beat together until light and fluffy.
3. Add 1 egg at a time, combine well.
4. Add in the flour and fold till well combined.
5. Add in cocoa powder, mix well.
6. Spoon the mixture into the paper cases, about 1/4 of the case. 
7. Arrange Maltesers (I add 3 into each cup) and spoon more mixture till it reaches 3/4 of cup. For my son, i add rainbow rice on the top for colour.
8. Bake the cupcakes in the oven for 20mins.
9. Enjoy!

M&M Chocolate Cookies



















Ingredients

2 Cups Flour (For best results, I use Bake King's Top Flour)
A pinch of salt
1/2 Tsp baking soda
150g Salted Butter, softened
2/3 Cup Brown Sugar
1/2 Cup Castor Sugar
2 Tsp Vanilla Essence
1 Egg
200g M&M Chocolate

Method

1. Combine the flour, salt, and baking soda, and set aside. (This will be called dry ingredients)
2. Cream butter and sugars. 
3. Add vanilla and the egg and mix to combine. 
4. Add the dry ingredients and stir to combine. 
5. Mix in the M&M chocolate. 
6. Scoop by ice-cream scoop or tablespoonfuls onto a cookie sheet and bake at 200 Degrees C for 15 min.
7. Enjoy!

Chocolate Cupcakes



















I tried this recipe after watching "The Neelys" on Food Network Asia. After scribbling down the recipe, i went out, bought the ingredients and followed it through.

Ingredients:

1 cup all-purpose flour
1/3 cup unsweetened cocoa
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Salt
1 stick unsalted butter, at room temperature
1 cup sugar
2 large eggs, at room temperature
1/4 cup whole milk, room temperature
1/4 cup coffee, room temperature
1 teaspoon vanilla extract

Method

1. Preheat the oven to 180 degrees C.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and 1/4 teaspoon salt.
3. In a large bowl, beat the butter and the sugar together until light and fluffy.
4. Slowly beat in the eggs, 1 at a time.
5. Mix together the milk, coffee, and vanilla in a measuring cup. 
6. Add 1/2 the dry ingredients to the butter mixture, beat to combine, then add the milk- coffee mixture and continue to beat, then add the remaining dry mixture. The mixture will look thick and airy.
7. Using an ice cream scoop, fill each cupcake liner 3/4 way full. 
8. Bake about 20 minutes. 
9. Remove the cupcakes from the oven to a wire rack and let cool.
10.Enjoy!

Dark Chocolate Ganache Tarts




















For our Anniversary today on 25th October 2011, i made some Dark Chocolate Tarts for my Wife. She loves Dark Chocolate and i hope she will love this.

Ingredients

Tart Shell 

100g Plain flour

30g Caster sugar
40g Butter, melted
15g Beaten egg
1 Tbsp water 

Chocolate Ganache


200g Thickened cream (35% fat)
200g Dark chocolate

Method

1. Mix all tart ingredients together, roll out to even thickness layer and cut out circles in relation with your tart shell.
















2. Fill your tart shell base and press it firmly against the wall
3. Pre-heat oven to 180 degrees and bake the tart shells for 15 minutes. 
















4. Leave to cool.
5. Heat up the thickened cream till just start to boil.
















6. Pour cream into a bowl with the chocolate broken up into pieces
















7. Mix well and pour into the tart shells.
8. Transfer to fridge for Ganache to set, at least 1 hour.
9. Enjoy!

Round 3 - Siew Mai, Har Kow, Dumplings, Baked Fish, Asparagus and Mushrooms, Roast Duck Wrap

















Round 4 - Wanton Soup

















Round 5 - Feta Cheese, Blue Cheese on Cracker, Edam Cheese, Smoked Salmon, Smoked Fish, Smoked Duck
















Round 6 - Crossaint, Strawberry Danish Pastry, Fresh Strawberries

















Round 7 - Oatmeal with Chopped Walnuts 

















Round 8 - Fruit Cake, Lemon Meringue, Chocolate Donut, Chocolate Cupcake, Fresh Strawberries dipped in Strawberry Chocolate and Dark Chocolate, Yoghurt with chopped Pecan

The food list can just go on and on but it was the max for me. I will strongly encourage you make a trip there to try out this magnificent spread. (That was the only meal i had that day)
