Maltesers Chocolate Cupcake




































Ingredients (makes 1 Dozen)

250g Butter, room temperature
150g Caster sugar
4 Eggs
200g Self-rising flour
1 packet Maltesers
2 Tbsp Cocoa powder 
Rainbow rice 

Method

1. Preheat the oven to 180C. 
2. Put the butter and sugar in a mixing bowl, and beat together until light and fluffy.
3. Add 1 egg at a time, combine well.
4. Add in the flour and fold till well combined.
5. Add in cocoa powder, mix well.
6. Spoon the mixture into the paper cases, about 1/4 of the case. 
7. Arrange Maltesers (I add 3 into each cup) and spoon more mixture till it reaches 3/4 of cup. For my son, i add rainbow rice on the top for colour.
8. Bake the cupcakes in the oven for 20mins.
9. Enjoy!

Chocolate Cupcakes



















I tried this recipe after watching "The Neelys" on Food Network Asia. After scribbling down the recipe, i went out, bought the ingredients and followed it through.

Ingredients:

1 cup all-purpose flour
1/3 cup unsweetened cocoa
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Salt
1 stick unsalted butter, at room temperature
1 cup sugar
2 large eggs, at room temperature
1/4 cup whole milk, room temperature
1/4 cup coffee, room temperature
1 teaspoon vanilla extract

Method

1. Preheat the oven to 180 degrees C.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and 1/4 teaspoon salt.
3. In a large bowl, beat the butter and the sugar together until light and fluffy.
4. Slowly beat in the eggs, 1 at a time.
5. Mix together the milk, coffee, and vanilla in a measuring cup. 
6. Add 1/2 the dry ingredients to the butter mixture, beat to combine, then add the milk- coffee mixture and continue to beat, then add the remaining dry mixture. The mixture will look thick and airy.
7. Using an ice cream scoop, fill each cupcake liner 3/4 way full. 
8. Bake about 20 minutes. 
9. Remove the cupcakes from the oven to a wire rack and let cool.
10.Enjoy!

Steam Banana Cupcakes

















Ingredients

A
3 Eggs
160g Sugar

B
250g Banana, mashed using a fork
1/4 tsp Salt

C
50g Milk

D
240g Flour
2 tsp Double action baking powder
1/2 tsp Baking Soda

E
90g Oil (Corn/Canola/Normal) 

Method

1. Beat A until thick
2. Add B to A and mix well
3. Add C to the mixture
and mix well
4. Add in D to mixture and mix well
5. Add in E to mixture and mix well
6. Pour batter into a Cupcake moulds to 3/4 filled
7. Steam for 20 mins 
8. Enjoy!
