Homemade "Subway" Sandwich
























Ingredients

Half a Foccacia bread
4 slices Cheddar cheese
3 slices Roast beef
3 slices Honey baked ham
1 Tomato, sliced
Black pepper to taste
Extra virgin olive oil

Method

1. Pre-heat oven to 180 degrees C. Cut bread into half lengthwise
2. On bottom slice, drizzle Extra virgin olive oil and with black pepper
3. Arrange tomatoes on bread
4. Arrange 2 slices Cheddar
5. Arrange 3 slices Ham
6. Arrange 3 slices Beef
7. Arrange 2 slices Cheddar
8. Cover with ther half, wrap in foil
9. Bake for 20 mins
10. Enjoy!

Home Made Mango Ice Cream



















Ingredients

200ml Whipping Cream
100ml Fresh Milk
3 Mangoes, flesh removed and blended
1 tablespoon Sugar or to taste

Method

1. Place whipping cream and fresh milk in a pot.
2. Add Mango puree.
3. Mix them well.
4. It will now look like thick mango milk.
5. Pour the mango milk to your freezing ware.
6. Allow to freeze.
7. Enjoy!

Home made Dark Chocolate Ice Cream



















Ingredients

200ml Whipping Cream
100ml Fresh Milk
55g Cooking Chocolate Chips
1 tablespoon Sugar or to taste

Method

1. Prepare a pot of water and let it simmer.
2. Place whipping cream and fresh milk in a smaller pot.
3. Put the smaller pot over the simmering water and warm the cream and milk.
4. Add the chocolate chips into the warm milk and melt it, while still hold it over the simmering water.
5. Keep stirring till all chocolate chips are melted and blended in with the milk.
6. Add sugar to taste and melt it.
7. It will now look like thick chocolate milk.
8. Pour the chocolate milk to your freezing ware.
9. Cool it before freezing.
10. Enjoy!

Homemade Tau Huay (豆花)



















Ingredients

1 Litre Soya Milk (Un-sweeten)
2 Tbps Gelatine 
Sugar to taste

Method

1. Heat up, do not boil, Soya milk till you see bubbles appear on the sides
2. Add sugar to taste 
3. Add in Gelatine slowly and stirring till all gelatine well dissolved
4. Pour soya milk into moulds and leave to set and chill in the fridge for 4 hours
5. Serve chilled with either sugar syrup or Soya milk (This 豆花 cannot be served warm/hot)

Homemade Carrot Cake














































Ingredients
150g Raddish (shredded and squeezed dry)
100g Carrot (shredded and squeezed dry)
50g dried shrimps (soak in water till soft, use the water for the water measurements below)
4 Mushrooms (soaked and cubed)
1 Chinese sausage (cubed)
3 Tbsp chai por (rinse with water)
2 Shallots (sliced)
5 Tsp salt
2 Tsp sugar
600g Rice flour (Erawan Brand)
1.9L water
Method
1. Mix 1.9L water with rice flour
2. Heat up some oil in wok, fry the shallots till golden brown.
3. Add in the chai por and fry, followed by dried shrimps, chinese sausage, then mushrooms.
4. Add in radish/carrots to fry till well cooked.
5. Add a little water when it gets too dry (less than 1/4 cup).
6. Fry till all the water dries up.
7. Mix well rice flour solution and pour into wok slowly.
8. Add pepper, salt, sugar
9. Cook till the mixture starts to slowly solidify
10. Pour into greased baking tin and smoothen out with back of spoon.
11. Steam on high heat for 45 mins immediately.
12. Pour water away from the cake after steaming
13. Leave to cool totally before inverting it onto a plate.
14. Cut to thick slices and pan fry them till golden brown or just eat it on its own!

Pan fry Fish Fillet with Homemade Hollandaise Sauce

















Ingredients

1 Boneless Fish Fillet 
2 Egg yolks
110g Butter, diced
Salt and freshly ground black pepper 
Lemon wedge (To squeeze over fish)

Method

1. Season fish fillet with salt and pepper
2. Pan fry 4 mins on each side till golden brown
3. Place a heatproof bowl over a saucepan of simmering water on a medium heat. Add the egg yolks and 1 tablespoon of cold water and whisk together. 
4. Gradually add the butter, bit by bit until each addition has melted and emulsified as it is whisked in, before adding the next. 
5. Once all the butter has been added, cook for a few minutes more, stirring regularly until the sauce has thickened enough to coat the back of a spoon. 
6. Taste and season with salt, pepper.
7. Spoon over the fish fillet and serve with wedge of Lemon

Homemade Ham and Cheese Focaccia Sandwich














 


















Ingredients

1 Homemade Focaccia*
Ham
Cheese

Method

1. Slice up focaccia, and halve it
2. In a pan, toast the focaccia
3. When the bread surfaced is slightly brown, remove from heat and quickly add ham and cheese
4. Enjoy while its warm and cheesy!


Ingredients

3/4 Cup Warm water
Generous dollop Good Quality Extra Virgin Olive oil (It must be Good quality as the bread depends on this to get the flavour)
1/2 Tsp Salt
1 3/4 Cup All-purpose flour
1 1/2 Tsp Dry yeast
2 Tsp sugar
Rosemary to taste (I use 1 Tbsp)
Thyme to taste (I use 1 Tbsp)

Method

1. Combine the warm water with the active dry yeast and the 2 tsp. sugar. Let stand until foamy, about 5-10 min.
2. Add the flour and salt gradually to the yeast mixture, about 1/2 cup at a time, until your dough no longer sticks to the sides of the bowl .
3. Drizzle 1/2 Tbsp olive oil into a pan. Place the dough into the pan. Cover and let rise for 60 min.
4. Preheat your oven to 180 Degrees C. 
5. Gently poke the risen dough all over with your index finger. Drizzle it lightly with the remaining olive oil and sprinkle with Rosemary and Thyme.
6. Bake the bread till it's golden brown, about 40 min.

Homemade Chocolate Truffles


















I learnt this from watching Gordon Ramsay's Ultimate Christmas 2010. Immediately, the very next day, 23rd Dec, i went to shop for ingredients and made this for our Christmas 2010! As my wife loved Dark Chocolate, this was a real treat!

Ingredients

250ml double cream (48% fat)
250ml single cream (10% to 12% fat) or you can use evaporated milk
500g dark chocolate (about 70% cocoa solids)
130g butter, diced
130g honey
cocoa powder 

Method 

1. Pour both creams into a medium saucepan.
2. Heat very gently for 5–6 minutes.
3. Meanwhile, break up the chocolate and place in a heatproof bowl with the diced butter and honey.
Strain the hot cream through a sieve onto the chocolate, butter and honey. 
4. Continue to stir until the chocolate has melted and the mixture is smooth.
5. Pour the mixture into a dish, chill in the fridge for an hour or until firm.
6. Scatter cocoa powder on separate plates. Take the truffle mix from the fridge and, using a teaspoon, scoop out a portion and shape into a sphere by quickly rolling it in your hands. (Do this speedily to avoid the truffle melting with the warmth of your hands.) 
7. Toss the truffle in cocoa powder and arrange on a plate. Repeat with the rest.
8. Place the truffles in a shallow plastic container, seal and refrigerate until firm and ready to serve.
9. Enjoy!

Homemade Hawaiian Pizza
















 



My son loves Pizza, especially Hawaiian Pizza. Not only that, he enjoys DIY also. This is another lazy recipe as the sauce and base are all store bought. But then, its just as nice. Try it.

Ingredient

2 ready made Pizza base
Enough Button Mushrooms for 2 pizza
Enough Canned Pineapple for 2 pizza
Enough Cheese Ham for 2 pizza
1 Bottle of Tomato base sauce
500g Grated Mozzarella Cheese

Method

1. Spread Tomato Sauce over Pizza Base
2. Sprinkle 1 layer of Mozzarella Cheese
3. Add in your ingredients to your preferrence
4. Sprinkle another layer of Mozzarella Cheese
5. Bake at the temperature stated by the manufacturer of your Pizza base.
6. Enjoy!

Rösti with Cheese and Homemade Mushroom Sauce


















This dish is my son's favourite! He has it everytime we go to Marche. It cost $14.80 for 1 set with mushroom sauce there and if i make at home, $14.80 can feed all 3 of us. So sometimes i will make it at home for him and family!

Ingredient

1kg Russet Potatoes, shredded
Homemade mushroom sauce*
Block of Parmesan cheese
Cooking Oil

Method

1. Heat up non-stick pan on medium heat and add 1 tbsp of oil
2. Gather enough shredded potatoes and sprinkle all over the pan to form a potato patty
3. On medium heat, leave it untouched for 5 mins
4. Flip over, and fry for another 5 mins
5. Remove to a plate, scoop a ladle of mushroom sauce on top
6. Sprinkle generous amount of Parmesan cheese on top
Enjoy!

*Simple mushroom sauce

Ingredients
 
200 g of thinly sliced mushrooms
285ml of milk
15 g of butter
1 tbsp of flour
Extra Virgin olive oil
salt and pepper 
 
Method
 
1. Heat a little olive oil and melt the butter in it.
2. Add the mushrooms and sauté until the mushrooms are soft and dark in colour.
3. Remove the pan from the heat and set aside.
4. Add the flour and pour in the milk.
5. Mix the ingredients together, stirring continuously.
6. Return the pan to a medium heat and cook the sauce, stirring constantly until it thickens.
7. Season with salt and pepper and cook for 5 minutes.
8. Done!

Homemade Pancakes

















Ingredients

1 Cup Self Raising Flour
1 Cup Milk
1 Egg

Method

1. Mix all 3 ingredients together to form a batter
2. Heat up a non-stick pan
3. Using a ladle, scoop a ladle of batter and pour onto frying pan
4. Pan fry the pancake with a total of 2 minutes per side
5. Enjoy with honey or syrup.
