Chocolate Butter Cupcake




















Ingredients (makes 1 Dozen)
250g Butter, room temperature
150g Caster sugar
4 Eggs
200g Self-rising flour
50g Rainbow rice
1 tube MM Minis 

Method
1. Preheat the oven to 180C. 
2. Put the butter and sugar in a mixing bowl, and beat together until light and fluffy.
3. Add 1 egg at a time, combine well.
4. Add in the flour and fold till well combined.
5. Add in rainbow rice, mix well.
6. Spoon the mixture into the paper cases, about 3/4 of the case. 
7. Sprinkle MM Mini and Rainbow rice on top.
8. Bake the cupcakes in the oven for 20mins.
9. Enjoy!

Mozzarella Cupcake



















Ingredients

1 Tbs Full cream milk 
90g Butter
65g Sugar
2 Eggs
85g Self raising flour
50g Grated Cheese, i use Mozzarella

Method
1. Beat butter, sugar and eggs together.
2. Add in flour, mix well.
3. Add in grated cheese and milk and mix well.
4. Spoon batter into cupcake cases. Makes about 5.
5. Bake at 180C for 25 mins.
6. Enjoy!

Blueberry Cupcake





















Ingredients (makes 1 Dozen)

250g Butter, room temperature
150g Caster sugar
4 Eggs
200g Self-rising flour
150g Blueberry

Method

1. Preheat the oven to 180C. 
2. Put the butter and sugar in a mixing bowl, and beat together until light and fluffy.
3. Add 1 egg at a time, combine well.
4. Add in the flour and fold till well combined.
5. Add in half of the blueberry, mix well.
6. Spoon the mixture into the paper cases, about 1/4 of the case. 
7. Add 1 or 2 blueberry and spoon more mixture till it reaches 3/4 of cup. 
8. Bake the cupcakes in the oven for 20mins.
9. Enjoy!

M&M and Rainbow Cupcake




































Ingredients (makes 1 Dozen)

250g Butter, room temperature
150g Caster sugar
4 Eggs
200g Self-rising flour

Cheese Cupcake


















I was alone on a public holiday and went to the supermarket. *Supermarket is to me what shoes and handbag is to women.* Then i thought of making something to surprise Jaylen when he comes home. So i decided to make something which he likes, Cheese and Cup Cakes!

Ingredient
1 Tbs Full cream milk
90g Butter
65g Sugar
2 Eggs
85g Self raising flour
50g Grated Cheese, i use Parmesan

Method
1. Beat butter, sugar and eggs together.
2. Add in flour, mix well.
3. Add in grated cheese and milk and mix well.
4. Spoon batter into cupcake cases. Makes about 5.
5. Bake at 180C for 25 mins.
6. Enjoy!

Chocolate Cupcake

















This cupcake is so fluffy and chocolate-ty that i cannot resist them, especially made with my wife's favourite Dark Chocolate. To introduce this as well as take part in a special event,

Ingredient
1 1/2 Tbs Full cream milk
180g Butter
130g Sugar
3 Eggs
165g Self raising flour
90g grated block of Dark Chocolate or any chocolate you like

Method
1. Beat butter, sugar and eggs together.
2. Add in flour, mix well.
3. Add in grated Chocolate and milk and mix well.
4. Spoon batter into cupcake cases. Makes about 10.
5. Bake at 180C for 25 mins.
6. Enjoy!

Steam Coffee or Chocolate CupCake


































This is a very very basic and easy cupcake recipe which i learnt from browsing chinese cookbooks at Popular bookstore.

Ingredients

4 eggs
100g Castor sugar
50ml Canola or Sunflower or any other oil
130g self raising flour or cake flour
1/2 tsp Cocoa or Coffee powder (Or you can put in chocolate chips)

1. Combine the eggs and sugar.

2. Add oil, flavouring, and flour and combine well.
3. Pour into paper cup cake mould and steam for 20 minutes.
4. Enjoy
