Braised Chicken with Mushrooms


















Ingredients

2 drumsticks and 3 wings or half a chicken, chopped to pieces
10 chinese mushrooms, soaked in water till soft 
15 slices ginger
3 cloves garlic, lightly crushed or thinly sliced
1 tbsp hua diao wine
3 tbsp soy sauce
3 tbsp dark soy sauce
1 tsp sugar
Salt to taste

Method

1. Cut chicken into pieces, marinate with soy sauce
2. Heat up 2-3 tbsps oil, stir-fry ginger and garlic until fragrant. 
3. Add in chicken pieces and stir-fry for few minutes.
4. Add in hua diao wine, soy sauce (from the marinade), dark soy sauce, sugar.
5. Stir-fry for 1 minutes. Add mushrooms. Cover and simmer for 20 minutes.
6. Open the lid every 5 minutes and stir-fry. Add water if necessary. 
7. Add salt to taste. 
8. Enjoy!

Garlic Mushrooms in White Wine

















Ingredients

3 cloves Garlic, chopped
400g Button Mushrooms (White and Swiss Brown), quartered
2 Tbsp Olive Oil
2 Tsp Dried Chili Flakes
1/2 Yellow Onion, finely chopped
1/4 cup of White Wine
1 Tbsp Butter
Sea salt to taste
Freshly Ground Black Pepper 

Method

1. In a saucepan, melt the butter with olive oil, over a moderate heat. 
2. Add the yellow onions and saute until they are translucent. Then add the chopped garlic. 
3. Toss in the mushrooms and chili flakes and saute over a high heat, for about 2 minutes. 
4. Mix in the white wine and reduce the heat. Let it cook for another 2 minutes.
5. Remove the saucepan from the heat and season the mushrooms with sea salt and black pepper. 
6. Enjoy!

Steam Fish Fillets with Mushrooms, Tomatoes and Black Beans

















Ingredients

2 Sutchi Fish Fillets
1 Large Tomato, Cut to thick slices
5 Shitake Mushrooms, Thinly sliced
1 Tbsp Black Beans
2cm thick Ginger, Shredded

Method

1. Cut fish up into 3 pieces and arrange in a plate
2. Scatter ginger over the fish
3. Lay tomato slices over the fish
4. Scatter mushrooms and black beans over
5. Steam for 20mins
6. Enjoy!

Braise Pork Belly with Mushrooms


















Ingredients

300-400g Pork Belly
5-6pcs Dried Chinese mushrooms (pre-soaked)
4-5 cloves Garlic (chopped)
2 Tsp Bean paste (Tau-chu)
1 Tsp Dark soy sauce
1/2 Cup Water (soaked Mushroom water)


Method
1. Heat up a medium saucepan with a little oil, saute the chopped garlic till fragrant.
2. Pour in the pork belly chunks and stir till half cooked, add in the dark soy sauce, stir and add in the mushrooms (cut into halves) then continue to stir for a while.
3. Add in the bean paste, stir and add in the water, stir and simmer for 25-30 minutes till meat is tender.
4. Enjoy!

Braised Mushrooms with Spinach

















Ingredients

1 Tsp Oyster sauce
1 Tbsp Soy sauce
1 Tsp Sugar
1 Tsp Sesame oil
1/2 cup water(Use water that soaked the mushrooms)
1 Tsp rice wine
14 Chinese dried mushrooms, soaked in warm water until softened, stemmed and squeezed dry
Cooking Oil
1 Tsp Cornstarch
1 Pkt Spinach

Method


1. In a small bowl, combine oyster, soy sauce, sugar, sesame oil, water and rice wine. 
2. Fill a large pot about three-quarters full of water, and place over high heat to bring to a boil.
3. In a wok, heat the cooking oil over medium heat
4. Add mushrooms, and stir-fry for 2 minutes. 
5. Add sauce mixture, and reduce heat to low. 
6. Cover, and simmer for 20 minutes
7. In a small bowl, combine cornstarch with 2 teaspoons water, and mix well.
8. Just before done, Add cornstarch mixture to the mushrooms.
9. Stir gently for 30 seconds, until mushrooms are glossy. 
10. Add the spinach to the boiling water, and blanch until cooked. Drain well and arrange on a platter. 
11. Lay the mushrooms over the spinach and pour the thickened gravy all over.
12. Enjoy!

Open Face Steak Sandwich Trio (Steak and Mushrooms, Steak and Egg, Steak and Cheese)

















Spoilt for choice on what to have when you crave for sandwich? Why not have a Sandwich Trio? Better still, make it a Steak Sandwich Trio!

Ingredient

500g beef chuck tender (This is selected due to cost and texture)
3 Tablespoons extra-virgin olive oil
1 teaspoon Rosemary (Dried), more if you like.
1 teaspoon black pepper
2 teaspoons sea salt 
Sandwich Loaf
Sliced Cheddar Cheese
Eggs
200g White Button Mushroom, Sliced
Butter


Method

1. Pour olive oil into skillet under medium to high heat.
2. Salt and pepper both sides of beef.
3. Brown all sides of roast. (You just want to get a nice brown coating on your meat for flavor.)
4. With a pointy-knife, poke about one dozen holes into top and bottom of the roast. This will allow juices to drain into roasting pan during oven cooking
5. Place roast into baked pan. Now add Rosemary, salt and pepper to top of roast.
6. Place roast into preheated oven to 180 degrees. 500g roast takes about 25 minutes to cook. I like my roast done between medium and medium rare. (The photo shows medium rare)
7. Play with the timing and temp to achieve your desire done-ness.
8. In a pan, heat up a knob of butter and soften the mushrooms till they turn dark brown.  
9. In another Pan, Fry the egg.
10. Assemble 3 sandwich loaf bread with the following combination -  (Steak and Mushrooms, Steak and Egg, Steak and Cheese)
11. Enjoy!

Stir Fry Broccoli with Mushrooms


















This is a very good dish to lose weight. i managed to lose about 30 kg just by having this alone for every dinner for 3 months. Broccoli is a "Super" food which is very high in the good stuff (Vitamins). Its also a Negative Calorie Food. Thats how i managed to lose the weight by following my Broccoli Diet.

If i were to show you my before and after photos, it will definitely scare you. You can see the photos here.

Ingredient

2 Broccoli, cut to florets
2 small clove Garlic, minced
4 large fresh Shitake mushrooms
Salt and Pepper to taste
Oil
50ml water or stock

Method

1. Heat up some oil in a frying wok on medium heat
2. Add in minced Garlic, stir for a while
3. Add in the Broccoli and stir fry for 5 mins, season with pinch of salt and pepper
4. Add in Mushrooms and water/stock and stir fry for another 5 mins
5. Enjoy!

Steam Chicken with Chinese Sausage and Mushrooms

















Ingredients

500g chicken drumstick, cut into small pieces
5 fresh shitake mushrooms
1 tsp of sugar
1 knob of ginger, thinly sliced
1 tbsp of oyster sauce
2 tbsp of light soy
1 tsp of sesame oil

Method

1. Pull off the hard stem and slice the mushrooms in half.
2. Slice the sausages into thick chunks.
3. Marinate the chicken with all the ingredients for 2 hours.
4. After 2 hours, steam on high heat for about 15 minutes.
5. Enjoy!
