Madeira Cake (马德拉蛋糕)








































Ingredients 

180g unsalted butter, softened 
185g caster sugar
3 eggs, at room temperature beaten
165g self-raising flour, sifted
2 Tsp finely grated lemon rind
1 Tsp  lemon juice ( I use more – I whole lemon)
2 Tsp caster sugar , extra to sprinkle
Icing sugar to dust
1 Tbsp lemon zest

Method  

1. Preheat oven to 160°C. Lightly grease and line the base and sides of an 18CM (7”) round cake tin.
2. Use an electric mixer to beat butter and sugar in a bowl until pale and creamy. This will take about 5-10 minutes.
3. Add eggs, one at a time, beating well after each addition. 
4. Fold in flour, lemon juice and lemon rind stir with a spatula until just combined.
5. When smooth, spoon into the prepared tin and level the surface. 
6. Sprinkle extra sugar on top.
7. Bake for 1 hour or until a skewer inserted in the centre comes out clean. 
8. Allow to cool in pan for 15 minutes before turning onto a wire rack to cool completely. If desired, dust with icing sugar and garnish with lemon zest.

Simple Pound Cake

















Ingredients

250g Butter
200g Castor sugar
4 Eggs
1 Tsp vanilla
250g self-raising flour
1 Tsp of baking powder
1 Tbsp of grated orange zest (Or Lemon)
5 Tbsp of orange juice (Or Lemon juice)

Method 

1.Put butter and castor sugar into a mixing bowl and beat until light and creamy.
2. Add in the eggs, one at a time, beat well until creamy
3. Add in vanilla
4. Divide flour (mix with baking powder) into three portions and add in gradually, use lowest speed to mix in flour.
5. Add in orange juice and orange zest, mix until well-combined
6. Pour into a greased baking pan, bake in pre-heated oven at 180c for 45mins.
7. Enjoy!

Pandan Sponge Cake

















Ingredients

A
3 Eggs
120g Sugar

B
1 tsp Pandan Essence or Pandan juice

C
30g Melted Butter

D
120g Flour
1 tsp Double action baking powder

Method

1. Beat A until light and fluffy
2. Add B to A and mix well
3. Add C to the mixture

4. Fold in D to mixture
5. Pour batter into a 20cm round mould. 

6. Steam for 30 mins 
7. Enjoy!

Steam Light Cheese Cake

















Today is Republic of Singapore Navy's 44th Navy Day! To celebrate this occasion, i present to you this Cheese Cake! Wishing the RSN a happy birthday and many more years to come!

Ingredient

A
3 Eggs
100g Sugar

B
4 slices cheddar Cheese (Not the sandwich type)(More if you like cheesy)
125g Milk
80g Butter

C
220g Flour
1 tbsp Double action baking powder

Method

1. Beat A until slightly thicken
2. Heat up B until cheese melted (Use the double boil method).
3. Add B to A and mix well
4. Fold in sieved C to the mixture
5. Pour batter into a 20cm round mould. 

6. Steam for 30 mins 
7. Enjoy!

Steam Chocolate Marble Cake (蒸蛋糕)

















This cake is loved by people of all ages and is commonly sold everywhere. However, i decided to DIY cos i prefer it to be less greasy and healthier if i Steam it rather then Baking it. Try it, So Simple and Healthy!

This recipe is featured on Full Plate Thursday 4-28-11 by Miz Helen's Country Cottage.

Ingredient

280g Butter
240g Castor Sugar
4 Eggs
300g Cake Flour
2 1/2 tsp double action baking powder
1 tbsp melted Chocolate 

Method

1. Beat butter and sugar until light and fluffy.
2. Add in eggs, cream them until smooth and light.
3. Add in sieved cake flour (mixed with double action baking powder)
4. Take the 100g of the batter and mix with melted chocolate
5. Pour plain batter into a 20cm round mould. Use a teaspoon and spoon in the chocolate batter and swirl to make pattern.
6. Steam for 70 mins (50 mins if you half all ingredients)
7. Enjoy!

Apple Upside Down Cake

















This is such an easy to make dessert for the family and its Healthy too!

Ingredients

For the Cake:
125g plain flour
1 tsp baking powder
Pinch of salt
2 tbsp caster sugar
50g butter
1 egg
Milk
orange zest

For the apples:
4 Green apples
50g butter
2 tbsp honey
50g Raisins
1 tsp cinnamon

1. Pre heat the oven to 180°C.

2. Sift the flour and baking powder into a large bowl with the salt and caster sugar. Cut in the butter and rub together with your fingers until you form a breadcrumb texture.

3. Beat the egg in a measuring jug then pour in milk up to the 110ml mark. Add the milk and egg to the flour mixture and bring together, add a little orange zest (leaving most for the apple mixture) and mix through.

4. Next, peel, core and dice the apples. Add the butter to a hot frying pan and toss the apples through before caramelising with the honey. Add the raisins and cinnamon to the pan along with the rest of the orange zest. Cook for a few minutes making sure that the apples are evenly coated in the honey caramel.

5. Arrange the apples into a pie dish or pan and lay the cake dough over the apples evenly and bake for 18 minutes until golden and risen in the centre.

6. Once done, invert the cake and you have the apple upside down cake!
