Stir Fry Potatoes with Minced Meat (馬鈴薯燉肉)


















Ingredients

3 medium Potato, Peeled and cut to thick slices
200g Mince Meat
2 Tbsp Light Soy
2 Tbsp Dark Soy
1 Tbsp Chinese Cooking Wine
1 Tsp Sugar
1/2 Cup Water
Oil

Method

1. Heat up oil in wok, stir fry potatoes for 10 mins. Put aside.
2. In same wok, stir fry the meat till all turn white, add in the Light soy, Dark Soy, Wine, Water and Sugar
3. Add in the potatoes and bring the sauce to a simmer
4. Simmer for about 10 mins till the potatoes are soft and sauce is starchy
5. Enjoy!

Stir Fry Marrow Green

















Ingredients

1 Marrow Green, about 500g
50g Dried Shrimp
100ml water
1 bundle Vermicelli
1 Egg
Salt and Pepper to taste

Method

1. Cut up marrow green to thin strips
2. Soak the dried shrimps in the water
3. Remove hydrated shrimps but do not throw away the water
4. Heat up a wok and add in 2 Tbsp Oil on medium heat
5. Add shrimps and fry till fragrant
6. Add in marrow green and stir fry for 5 minutes 
7. Pour in the dried shrimp water and let it simmer on low heat for 5 mins
8. Add in Vermicelli to soak up all the juices and cook through
9. Beat an egg and slowly pour in the wok while stirring the marrow green to create egg flower
10. Season with salt and pepper
11. Enjoy!

Stir Fry Broccoli with Carrots and Chicken Fillet


















Ingredient

2 Broccoli, cut to florets and stems separated
2 small clove Garlic, minced
2 Carrots, sliced
Handful of dried prawns, soak in 100ml water
100g Chicken Fillet, season with salt and pepper and dice to 1 cm cubes 
Salt and Pepper 
Oil
100ml Dried Prawns water

Method

1. Heat up some oil in a frying wok on medium-high heat
2. Add in minced Garlic and dried prawns, stir for a while
3. Add in the Broccoli stems and carrots, stir fry for 5 mins
4. Add in florets with the water, stir fry for 5 mins 
5. Add in Chicken fillet and stir fry for another 5 mins
6. Enjoy!

Stir Fry Marrow Green with Vermicelli

















Ingredients

1 Marrow Green (approx 600g), sliced into strips
1 bunch Vermicelli, soaked in water to soften
50g Dried Shrimps, soaked in 100 ml Water 
100ml Dried Shrimp water (The water thats used to soak the shrimps)
Cooking Oil

Method

1. Heat up a wok, add cooking oil.
2. Add in soaked dried shrimp and stir fry
3. Once the flavour is released, add in marrow green to stir fry
4. Once marrow green is half cooked and soften, about 2-3 mins, add in the water. 
5. Simmer the marrow green till almost cooked, add in vermicelli and mix well for about 1 min.
6. Enjoy!

Stir fry Pork with Potatoes (马铃薯炒猪肉)


















Ingredients


250g Pork, sliced

3 Potatoes, peeled and sliced to 1cm thick slices
3 Cloves garlic, minced

2 Tbsp dark soy sauce
1 Tsp light soy sauce
A pinch of salt

100ml Water 

Method


1. Heat up your wok until hot. Turn heat to medium. Add in the garlic and fry until aromatic.

2. Add the pork slices and stir fry for a bit. Add the light soy sauce then add in the potatoes, then add in the salt.  
3. Add in the dark soy sauce.  Stir fry around again to coat well. Add water. 
4. Bring to a boil and turn heat lower to allow for simmering until everything is cooked.  
5. Enjoy!

Stir Fry Pork with ginger and spring onion (姜葱猪肉)

















Ingredients

300g pork, cut into thin strips

4 stalks of spring onions, cut into inch-long sections
1 inch piece of ginger, peeled and sliced
Oil for cooking


Marinade

1 tbsp Chinese rice wine (or dry sherry)
1 tbsp light soy sauce
1 tsp cornflour
A dash of white pepper


Seasoning

1 tbsp Chinese rice wine (or dry sherry)
1 tbsp oyster sauce
1 tbsp light soy sauce
1/2 tbsp dark soy sauce (for colour, optional)
1/2 tbsp sesame oil
4 tbsp water
2 tsp corn flour, dissolved in 2 tbsp water


Method

1. Marinade the pork and set aside in the refrigerator for a few hours or overnight for best result.

2. Combine all the seasoning ingredients (except for the last cornflour mixture) in a bowl. Heat a wok or heavy based pan on medium-high heat. Add in some cooking oil and heat until the oil is hot but not quite smoking. Stir fry the ginger and white parts of the spring onions very quickly for about 30 seconds.
3. Add the pork and stir fry briskly until the meat is about 70 percent cooked, which should take only a couple of minutes. Add the green parts of the spring onions, pour the seasoning ingredients into the pan and mix evenly.
4. Stir in the corn flour mixture at the end and simmer on low heat for about a minute to thicken the sauce. Dish out and serve immediately

Stir Fry Beef with Basil

















Ingredients

400g beef strips, or steak cut into thin strips

2 tbsp oyster sauce
1 Tsp Corn starch
Pinch of Salt and Pepper
handful Basil leaves
2 tbsp vegetable oil

Method


1. Marinade the beef with cornstarch, salt and pepper

2. Heat a wok or large frying pan until smoking hot. Pour in the oil and swirl around the pan, then add the beef strips. 
3. Cook, stirring all the time, until the meat is lightly browned, about 3 mins, then add the oyster sauce. 
4. Cook until heated through and the sauce coats the meat. Stir in the basil leaves and serve immediately

Stir Fry Celery with Prawns

















Ingredients


150 g Prawns, deshelled and deveined
2 stalk Celery, peeled and sliced diagonally
1 Tsp oil
½ Tsp salt
1 Tbsp rice wine

Method

1. Heat oil in wok. Add in celery and sauté for 1 minute.
2. Add in prawns and cook until prawns turn pink.
3. Add in salt and rice wine, stir.
4. Off heat, dish up and serve.
5. Enjoy!

Stir Fry Red Spinach with Otah Slices


















Ingredients

500g Red Spinach, washed and chopped to 2 cm lengths
2 Cloves garlic, minced
1 Tbsp Light Soy
50g Ready made Otah, thinly sliced

Method

1. Heat up wok with oil and add in garlic
2. Add in Red Spinach and stir fry till they reduce volume to 1/3 of original size
3. Add in light soy and otah
4. Once spinach is done, serve

Stir Fried Egg with Bitter Gourd and Pork

















Ingredients

2 Eggs - beaten with a pinch of salt and pepper

150g Ground pork
1/2 Bitter gourd

Marinade for pork

1 Tbsp Light soy sauce
1 Tbsp Dark soy sauce
a little sesame oil
a dash of white pepper

Method

1. Add Marinade to pork and mix well. Set aside. 
2. In a pan heat some oil and fry bitter gourd till cooked, dish up.
3. Add little oil to the same pan, stir fry ground pork until cooked, pour in the cooked bitter gourd, stir fry briefly.
4. Pour in the beaten egg to the pork mixture and stir fry until egg is set.
5. Dish up and serve immediately.
6. Enjoy!

Stir Fry Udon with Luncheon Meat and Crabstick

















Ingredients

1 Packet Udon
1/4 Can Luncheon Meat
3 Crabstick
1 Tbsp Oyster Sauce
2 Tsp Light Soy
1 Clove Garlic, roughly chopped
1 Egg
Pepper to taste
Cooking Oil

Method

1. Cook udon in boiling water for 2 mins.
2. Pan fry Luncheon meat till crisp
3. In a wok, add cooking oil and Garlic
4. Once aromatic, crack egg and stir
5. Drain and add in udon and stir fry
6. Add in Crabstick and Luncheon meat, Oyster sauce and Light Soy
7. Stir fry for 1 to 2 mins 
8. Enjoy!

Stir Fry Leek With Tofu


















Ingredients

4 Leeks, sliced thickly
2 Red Chillies, sliced thinly
2 Pcs Firm Tofu, sliced to 2cm cubes
3 cloves Garlic, chopped
15 Prawns, shelled
2 Tbsp Oyster Sauce
4 Tsp Light Soy Sauce
4 Tbsp Peanut Oil

Method

1. Heat the peanut oil in a wok, saute the firm tofu until lightly brown and set aside.
2. Add the garlic and saute until fragrant. 
3. On medium heat, add the leeks and give it a quick stir and mix in the tofu with oyster sauce and light soy sauce
4. Add the prawns, red chillies and saute.
5. Once prawns turn pink and done, serve.
6. Enjoy!

Stir Fry Vermicelli with Pork Leg and Kailan using Happycall Pan

















Ingredients

1 Can Pork Leg
1 Bunch Vermicelli, soaked
100g Kailan, Washed and chopped

Method

1. Pour Pork Leg contents into Happycall Pan
2. Add in Vermicelli and Kailan
3. Cover pan and turn on medium heat
4. Once you see steam coming out from the outlet, its done!
5. Enjoy!

Stir Fry Beef and Baby Bok Choy


















Ingredients
 
200g beef, thinly sliced
1 pkt of baby bok choy (Shanghai Green), chopped
2 cloves Garlic, minced
soy sauce to taste
1/4 cup oyster sauce
pepper to taste
2 Tbsp cooking oil
1 Tsp. sesame oil

Method 

1. Heat oil in a wok, stir fry the sliced beef until tender about 1-2 minutes
2. Add garlic, stir for a minute.
3. Add soy sauce, cook for 2 minutes.
4. Add in the baby bok choy, oyster sauce and pepper. Stir Fry till bok choy cooked through.
5. Turn off the heat, add sesame oil, mix well. Serve immediately.
6. Enjoy!

Stir fry Luffa with Prawns (丝瓜炒虾蛋 )


















Ingredients

1 Luffa, skin removed and chop into 1 cm thick pieces
10 Prawns, de-shelled
1 Egg, beated
1 Tsp Light Soy
1 Tsp Sesamee Oil
50ml Chicken Stock or water
4 cloves Garlic, minced
Cooking Oil

Method
1. Mix prawns in light soy and sesamee oil and set aside
2. Heat up a wok to medium heat and stri fry garlic with oil till fragrant
3. Add in Luffa, and liquid of choice
4. Braise the luffa till it starts to soften and add in the prawns with the marinade
5. Once prawns turn pink, stir in the egg to create egg flower
6. Enjoy!

Stir Fry Broccoli with Mushrooms


















This is a very good dish to lose weight. i managed to lose about 30 kg just by having this alone for every dinner for 3 months. Broccoli is a "Super" food which is very high in the good stuff (Vitamins). Its also a Negative Calorie Food. Thats how i managed to lose the weight by following my Broccoli Diet.

If i were to show you my before and after photos, it will definitely scare you. You can see the photos here.

Ingredient

2 Broccoli, cut to florets
2 small clove Garlic, minced
4 large fresh Shitake mushrooms
Salt and Pepper to taste
Oil
50ml water or stock

Method

1. Heat up some oil in a frying wok on medium heat
2. Add in minced Garlic, stir for a while
3. Add in the Broccoli and stir fry for 5 mins, season with pinch of salt and pepper
4. Add in Mushrooms and water/stock and stir fry for another 5 mins
5. Enjoy!
