Baked Meatballs in Tomato Cheese Sauce






Ingredients

500g Minced Beef
Half a Yellow Onion, minced
50g Cheddar Cheese, shredded
Pepper to taste

For the Sauce

2 tbs olive oil
1 onion, peeled and finely chopped
1 garlic clove, peeled and finely chopped
120ml dry white wine
2 x 400g tins chopped tomatoes
100ml water
1-2 tbs caster sugar
50g Cheddar Cheese
sea salt and black pepper
Method

1. Mix the Meatballs ingredients together
2. Shape them into 5 cm diameter balls and place on baking tray lined with baking paper
3. Pre-heat oven to 200 degrees c
4. Bake for 22 mins
5. Heat the olive oil in a frying pan, add the onion and garlic and fry gently until lightly golden.
6. Increase the heat slightly and pour in the wine.
7. Let it bubble until reduced by half, then stir in the chopped tomatoes, water and sugar.
8. Simmer for 10-15 minutes, until the tomatoes are soft, then remove the pan from the heat, mix in cheese and stir well.
9. Mix in the cooked meatballs.
10. Enjoy!

Meatballs in Tomato Sauce




















Ingredients

For the Slurry

1/2 cup panko breadcrumbs
1/4 cup milk
1 egg
1/2 tsp garlic powder
1 tsp dried Italian herb mix


For the Meatballs

300gms ground beef
200gms minced pork
1 tsp salt
1/2 tsp black pepper
1/2 yellow onions chopped100gms sliced button mushrooms
For the Sauce

2 tbs olive oil
1 onion, peeled and finely chopped
1 garlic clove, peeled and finely chopped
120ml dry white wine
2 x 400g tins chopped tomatoes
100ml water
1-2 tbs caster sugar
sea salt and black pepper 
 
Method

1. Mix the Slurry ingredients together
2. Mix the Meatballs ingredients together
3. Combine the both together
4. Shape them into 2 cm diameter balls and place on baking tray lined with baking paper

Meatballs and Mash






















Ingredients
Meatballs 
200g Mince Beef
200g Mince Pork
1 Sprig Flat Leaf Parsley, roughly chopped
1 Tbsp Tomato Paste
2 Clove Garlic, minced
50g Cheddar cheese, Shredded
Salt and Pepper
Mash 
4 Russet Potatoes, Cut to 1" cubes
2 Tbsp Margarine (Healthier, if you prefer butter u can)
Milk (Amount depend on your preferred consistency)
Salt and Pepper
Method
1. Mix all meatballs ingredients and chill for minimum 2 hours
2. Pre-heat Oven to 200 Degrees C
3. Shape the meatballs and bake them for 20 minutes
4. Put potatoes in a pot and fill with water and a generous pinch of salt.
5. Bring to a boil and cook till potatoes slide off a knife when poked.
6. Drain, and add in margarine and milk.
7. Mash with a masher till smooth and creamy.
8. Season with pepper.
9. Arrange mash on bottom of plate
10. Arrange meatballs on top of mash

Gordon Ramsay's Meatballs in tomato sauce



















Ingredients

500g good quality minced beef 
1 onion, peeled and very finely chopped
1 garlic clove, peeled and finely chopped 
50g (1"oz) white breadcrumbs
25g (1oz) Manchego cheese (or Cheddar), grated 
2tbsp chopped flat-leaf parsley, plus extra to finish 
Sea salt and black pepper 
1 large egg, lightly beaten 
2tbsp olive oil 

Tomato Sauce

2tbsp olive oil 
1 onion, peeled and very finely chopped
1 garlic clove, peeled and finely chopped 
120ml (4fl oz) dry white wine 
2 x 400g tins chopped tomatoes 
100ml (3½fl oz) water 
1-2tsp caster sugar

Method

1. To make the meatballs, mix the minced beef, onion, garlic, breadcrumbs, cheese and chopped parsley together in a bowl until combined. 
2. Season well and add the beaten egg to bind, mixing with your hands.
3. Shape the mixture into about meatballs, trying not to press them too tightly. Place on a large plate, cover with clingfilm and chill for at least 30 minutes.
4. To make the tomato sauce, heat the olive oil in a frying pan, add the onion and garlic and fry gently until lightly golden.
5. Increase the heat slightly and pour in the wine. Let it bubble until reduced by half, then stir in the tomatoes, water and sugar. Season with salt and pepper. Simmer for 10-15 minutes, until the tomatoes are soft, then remove the pan from the heat.
6. To cook the meatballs, heat the olive oil in a large, wide pan. Add the chilled meatballs and fry for 5 minutes, turning frequently, until browned all over.
7. Pour the tomato sauce over them and simmer for a further 10-15 minutes until the meatballs are cooked through.
8. Divide the meatballs and tomato sauce between warm bowls and sprinkle with chopped parsley to serve.

Bake Pork Meatballs with Streaky Bacon


















Ingredients

250g Minced Pork
1 Onion, minced
1 Clove garlic, minced
1 Sprig Rosemary, leaves roughly chopped
1 Egg
8 Slices Bacon (4 Slices thinly minced for meatballs, 4 slice for baking with meatballs)
1 Slice bread, chop to cubes soak in 3 Tbsp Milk
Pepper to taste

Method 

1. Mix all ingredients together and marinade for 1 hour
2. Roll them into meatballs. Preheat Oven to 180 Degrees.
3. Cut up 4 slices of bacon into 1 cm square
4. Lay bacon slices  in a baking tray
5. Place 1 meatball over every bacon slice
6. Bake in oven for 15 mins
7. Enjoy!

Meatballs Fettuccine

















Ingredients

500g Fettuccine Pasta
Block of Parmesan Cheese
1 tbsp Salt
Extra Vrgin olive oil

For Meatballs

700g ground Beef 
300g ground Pork
2 clove of garlic
1 tablespoon of Extra Vrgin olive oil
1 egg
50g Bread crumbs
1 tsp Basil (Fresh is better)
1 tsp Parsley (Fresh is better)
1 tsp Oregano (Fresh is better)
Pepper and Salt

For Sauce

2 tbsp Extra Virgin Olive Oil
2 cloves Garlic, mince finely
1 tsp Basil (Fresh is better)
1 tsp Parsley (Fresh is better)
Chilli Flakes (Optional)
Salt and Pepper to taste

Method

1. Boil a pot of water and dump in 1 tbsp Salt and some drops of Extra Virgin Olive Oil
2. Once boiled, throw in Fettuccine and boil for 10 to 12 mins or depending on your choice of done-ness
3. Mix all meatballs ingredients together. (for best results, do it few hours before cooking)
4. Roll the meat between your palms to form a meatball, depending on your choice of size
5. Pan fry the meatballs or roast them in oven 200 Degrees for 10 mins
6. Once Fettuccine is done, drain and drizzle in Extra Virgin Olive Oil.
7. In a saucepan (medium flame), heat Extra Virgin Olive Oil and stir fry garlic, parsley/basil and chilli flakes (Optional).
8. Once sauce heated through, Throw in the Fettuccine and mix well with salt and pepper.
9. Plate your Fettuccine and Lay Meatballs all over.
10. Grate Parmesan Cheese on top
11. Enjoy!
