Mushroom Omelette

















Ingredient

6 White button mushrooms, sliced
2 Slices of luncheon meat, diced
3 Eggs
Knob of Butter
Salt and Pepper to taste

Method

1. Heat up a wok and add in butter
2. Add in luncheon meat and mushrooms
3. Once mushrooms are soft and turn brown, Pour in eggs
4. On medium heat, cook till the egg surface start to solidify
5. Flip omelette over and cook on other side for 1 minute
6. Enjoy!

Mushroom Omelette

















Ingredient

250g White or Brown Mushrooms, thinly sliced
30g Butter
3 Eggs
Salt and Pepper
Extra Virgin Olive Oil
2 Clove Garlic, minced

Method

1. Heat up a wok and melt the butter. Once melted, drizzle in olive oil.
2. Add garlic and mushrooms.
3. Cook till mushrooms are brown and soften. Season with salt and pepper.
4. In another pan, fry the eggs (beaten) into an omelette.
5. Serve Omelette with mushrooms over it.
6. Enjoy!

Onion Omelette


















Ingredients

1 Large Red Onion, Thinly sliced
2 Eggs, Beaten
1 Tsp Light Soy
Black Pepper
Oil

Method

1. Heat up a pan and add in onion slices to fry for 5 mins till soft
2. Mix Light soy into eggs and pour over the onions
3. Once egg starts to solidify on the surface, flip over and pan fry for another minute.
4. Finish off with black pepper
5. Enjoy!

5 Spice Mince Meat Omelette

















Ingredients

250g Mince pork
1 Egg for marinade
2 Eggs for Omelette 
1 Small onion, diced
50g Fish paste
1/4 Tsp five-spice powder
1/2 Tbps fish sauce
Pinch of white pepper
Pinch of salt
Oil, for frying

Method

1. Mix all the ingredients (except the oil) in a bowl and blend well. The mixture should be sticky.
2. Heat up a pan with some oil,  add in meat mixture and flatten it out.
3. After 5 mins, flip over the meat. Beat 2 eggs and pour over the meat.
4. Once Egg is done, remove from pan. 
5. Enjoy!

Celery Omelette

















Ingredients


4 stalks Celery
2 eggs
pinch of salt
Cooking Oil

Method:

1. Finely slice the Celery
2. Add the eggs, salt and beat well.
3. Heat some oil in a large nonstick frying pan. 
4. Sweat the celery for 5 mins and add eggs mixture into the pan and spread evenly. Cook about 2-3 minutes on each side. 
5. Enjoy!

Potato Omelette with Fresh Parsley

















Ingredients

2 potatoes, sliced to 1 cm thickness
3 Eggs
1 Tbsp of Fresh Chopped Parsley
2 slices of Ham, Chopped
Salt and Pepper
Oil

Method

1. Heat a pan with oil 
2. Lay potato slices flat on the pan and slowly brown them on low heat
3. In the meantime, beat 3 eggs and add in parsley and ham
4. 5 mins later, flip all them over and brown the other side
5. Once the potatoes are flipped over, pour the eggs mixture in
6. Sprinkle salt and pepper to taste 
7. Once eggs solidify, serve with a sprinkle of fresh parsley on top
8. Enjoy!

Ham and Onion Omelette


































Ingredient

3 Eggs, beaten
100g Ham, sliced thickly
1 Red Onion, sliced into rings
Olive oil
Salt and pepper to taste

Method

1. Heat up pan and drizzle in olive oil on medium heat
2. Add in onions and let them sweat
3. Once onions turn translucent, add in ham and pour beaten eggs in
4. Add in pinch of salt and pepper
5. Flip over the omelette after 3 mins
6. Another 2 mins and its ready
7. Enjoy!

Crabstick and Parmesan Cheese Omelette

















Ingredients

2 Eggs, beaten
4 Crabstick, cut into half lengthwise
Generous shavings of Parmesan Cheese
Oil

Method

1. Heat a wok, pan fry crabstick for 1 min
2. Pour in the eggs
3. When the eggs start to solidify, flip them over and fry the other side for 1 min.
4. Sprinkle generous shavings of parmesan cheese over the omelette.
5. Enjoy!

Long Bean Omelette



































This dish reminds me of my childhood, about my mum who used to make this for dinner as its economical and nutricious. I use Long Beans, typically found in asian markets. If you do not have that, you can substitute with French beans.

Ingredients

4 strands long beans
2 eggs
pinch of salt
Cooking Oil

Method:

1. Finely slice the Long Beans
2. Add the eggs, salt and beat well.
3. Heat some oil in a large nonstick frying pan. 
4. Pour the beans and eggs mixture into the pan and spread evenly. Cook about 2-3 minutes on each side. 
5. Enjoy!
