Minced Pork with Dong Cai (冬菜肉饼)

















Ingredients
300g Mince Pork
25g Dong Cai (冬菜)
Half a sweet potato, chop to cubes 
1 Egg
Pepper to taste
Method
1. Chop up the 冬菜 and rinse water once.
2. Combine all ingredients and marinade for 1 hour in fridge
3. Lay the mixutre flat in a container and steam for 15 mins
4. Enjoy!

Potato and Pork Stew (马铃薯焖猪肉)


















Ingredients

3 Russet Potatoes, sliced to 0.5 cm thickness
1 large Onion, sliced thinly
1 clove Garlic, minced
Handful of Frozen green peas
300g Minced Pork
Oil
2 Tbsp Dark Soy
2 Tbsp Light Soy
1 Cup Water
1 tsp Sugar

Method

1. Heat up oil in wok, add in garlic
2. Add in onions and potatoes and stir fry for 5 mins
3. Add dark soy and light soy and stir well to mix
4. Add water and bring to a simmer
5. Add in minced pork, little by little and stir them in the wok to break them up
6. Once potatoes are cook through (soft to break off with a fork), add in green peas and stir for 1 min
7. Enjoy!

Steam Minced Pork with Dong Cai (冬菜蒸猪肉)



















Ingredients

300g Minced pork with fats (五花肉)
1 Tbsp Light soy sauce

1 Egg 
50g Dong Cai (Soak Dong cai in water for 15 minutes, wash and squeeze dry. Chop Dong Cai to smaller pieces)
2 stalk Spring Onion, chopped



Method 

1. Split meat and dong cai into 2 portions
2. In a pan, drizzle some oil on the base. Lay 1 portion of pork.
3. Sprinkle 1 portion of dong cai evenly over the pork.
4. Repeat another portion of pork and dongcai.
5. In a bowl, beat egg and spring onion together.
6. Pour mixture on the pork, evenly spreading all over the pork surface 
7. Steam at high heat for about 20 mins.
8. Enjoy!

Steam Minced Pork with Salted Fish

















Ingredients


200g minced pork
2 Chinese mushrooms, soak in water till soft, finely chopped
2 Water chestnuts, finely chopped
1 thumb-sized piece of salted fish, rinse and cut into small pieces
1 Tsp grated ginger
Some shredded ginger
Some chopped spring onion (garnish)

Seasonings:
2 Tsp soy sauce
1 Tsp cooking wine
1 Tsp sesame oil
1/2 Tsp sugar
Pinch of salt
Dash of pepper
1 Tbsp water
1 Tsp cornstarch
1 Tbsp cooked shallot oil (to drizzle on top before steaming)

Method

1. Mix the minced pork with the seasonings.  
2.Stir in the chopped mushrooms, water chestnuts, half the salted  fish and grated ginger. 
3.Spread and press the meat patty evenly into a plate. Chill in the fridge for at least an hour.
4.Sprinkle the remaining salted fish and shredded ginger on top of the meat patty. Drizzle with shallot oil. 
5.Steam on high for about 10 minutes.  
6.Garnish with  chopped spring onion and serve immediately.

Bittergourd, Pork Liver and Minced Pork Soup (苦瓜, 猪肝, 肉碎 汤)

















Ingredient

1 Chicken bone (Keep the Meat for stir fry or Stew)
200g Pork Liver
200g Minced Pork
1 large bittergourd, sliced thinly
Handful of dried scallops
2 Litres Water
1 Egg

Method

1. Scald the chicken bone in hot water for about 10 seconds
2. In a stock pot, pour in the water, Chicken bone and scallops, bring to a boil
3. Add in the bittergourd and lower the flame
4. On low flame for 2 hours, covered to retain moisture
5. 10 mins before serving, add in the liver, minced meat to soup
6. Just before serving, beat an egg, and slowly pour into the soup, slowly stirring the soup to create egg flower
7. Enjoy
