Steam Chicken with D.O.M Liquor

 Ingredient

4 Chicken Drumsticks, chop to pieces
4 Shitake Mushrooms, Sliced
5 Red Dates
3 Tbsp D.O.M Liquor (Or you can use your fav)
1 Tbsp Light Soy
1 Tbsp Oyster Sauce
Handful of wolfberries, soaked

Method

1. Marinade chicken with 2 Tbsp D.O.M Liquor, light soy and oyster sauce for at least 2 hours
2. Pour chicken with marinade juices in a plate
3. Arrange shitake mushrooms over chicken
4. Sprinkle the wolfberries over the chicken and place the red dates around
5. Steam for 15 minutes
6. Prior to serving, Drizzle 1 Tbsp of D.O.M over the chicken for extra fragrance.
7. Enjoy!

Roasted Chicken Parts with Extra Virgin Olive Oil and Herb Garlic Bread

















Ingredients

Chicken Parts (Any parts, i use the chicken wings and drumsticks)
1 Lemon
2 Tbsp Dried Thyme
2 Tbsp Sea Salt
Pinch of Pepper
Dash of EV Olive oil 
1 packet NTUC Herb Garlic Bread

Method

1. Wash and pat dry chicken parts, place in a roasting pan
2. Pre-heat Oven to 180 Degrees
3. Rub EV Olive oil all over the chicken parts
4. Rub Sea salt and dried thyme all over the chickenparts
5. Slice Lemon into half, squeeze the juice on the chicken parts and toss well
6. Roast for 30 mins
7. While the chicken parts are out of the oven, pop in the herb garlic bread to the parameters on the package.
8. Salt and Pepper to taste
9. Enjoy!

Homemade Hawaiian Pizza
















 



My son loves Pizza, especially Hawaiian Pizza. Not only that, he enjoys DIY also. This is another lazy recipe as the sauce and base are all store bought. But then, its just as nice. Try it.

Ingredient

2 ready made Pizza base
Enough Button Mushrooms for 2 pizza
Enough Canned Pineapple for 2 pizza
Enough Cheese Ham for 2 pizza
1 Bottle of Tomato base sauce
500g Grated Mozzarella Cheese

Method

1. Spread Tomato Sauce over Pizza Base
2. Sprinkle 1 layer of Mozzarella Cheese
3. Add in your ingredients to your preferrence
4. Sprinkle another layer of Mozzarella Cheese
5. Bake at the temperature stated by the manufacturer of your Pizza base.
6. Enjoy!

Roast Lamb Sausages with Onions and Carrots

















I love roast Sausages. I love Lamb. So when there are Lamb Sausages, its a good occasion to Roast them! Simply adore them. 

Ingredients

6 to 7 Rosemary Lamb Sausages or any other type of Sausage (I buy mine fresh from Cold Storage Supermarket)
2 Red Onions
2 Carrots
1 tsp dried Rosemary (If you have fresh that's better)
Drizzle of Extra Virgin Olive Oil

Method

1. Pre-heat Oven to 200 Degrees
2. Cut up Onions to quarter and Carrots to thick slices
3. Mix the sausages, onions and carrots with dried rosemary and good drizzle of Extra Virgin Olive Oil
4. Arrange them in a roast pan and roast for 10 mins
5. Enjoy! Preferbaly with Loads of BEER!

Curry Chicken (咖喱鸡)

















This is my all time favourite dish. When i was young, i can just have the curry gravy with rice and potatoes for 3 meals a day. Even when i eat out at economical rice stall, this is a must order. I love to cook my potatoes to so soft that by using the back of a fork, i can mashed them in my plate and drizzle the curry over them. This curry mashed potatoes is heavenly! To save time, i usually buy ready mixed sauces. After testing few brands, i decided to go with A1 Brand. Try it, you'll be hooked!

Ingredients

1 pack instant curry paste (i use A1)
8 medium peeled potatoes, cut to quarters
4 chicken leg quarters (4 drumsticks and 4 thighs or 1 whole chicken)
2 lemongrass (use the white parts only, pounded)
1 tablespoon oil
2 cups water/500 ml (use less water if you want thicker curry or more if you want more curry sauce)
100ml coconut milk, i use Light version by Ayam Brand
Some curry leaves

Method

1. Slaughter and clean chicken. Cut the chicken into 8 pieces.
2. Heat up a deep pot and add the oil. Add the curry paste into the pot and stir until aromatic. Add the chicken meat, curry leaves and lemongrass. Stir for 1 minute before adding the water.
3. Cover the pot and lower the heat to medium. Bring the curry chicken to boil and then lower the heat, add the potatoes and simmer for 30 minutes. Add the coconut milk and bring it to boil. Serve hot.
4. Serve with loads of baguette!
5. Enjoy!

Rösti with Cheese and Homemade Mushroom Sauce


















This dish is my son's favourite! He has it everytime we go to Marche. It cost $14.80 for 1 set with mushroom sauce there and if i make at home, $14.80 can feed all 3 of us. So sometimes i will make it at home for him and family!

Ingredient

1kg Russet Potatoes, shredded
Homemade mushroom sauce*
Block of Parmesan cheese
Cooking Oil

Method

1. Heat up non-stick pan on medium heat and add 1 tbsp of oil
2. Gather enough shredded potatoes and sprinkle all over the pan to form a potato patty
3. On medium heat, leave it untouched for 5 mins
4. Flip over, and fry for another 5 mins
5. Remove to a plate, scoop a ladle of mushroom sauce on top
6. Sprinkle generous amount of Parmesan cheese on top
Enjoy!

*Simple mushroom sauce

Ingredients
 
200 g of thinly sliced mushrooms
285ml of milk
15 g of butter
1 tbsp of flour
Extra Virgin olive oil
salt and pepper 
 
Method
 
1. Heat a little olive oil and melt the butter in it.
2. Add the mushrooms and sauté until the mushrooms are soft and dark in colour.
3. Remove the pan from the heat and set aside.
4. Add the flour and pour in the milk.
5. Mix the ingredients together, stirring continuously.
6. Return the pan to a medium heat and cook the sauce, stirring constantly until it thickens.
7. Season with salt and pepper and cook for 5 minutes.
8. Done!

Pandan Sponge Cake

















Ingredients

A
3 Eggs
120g Sugar

B
1 tsp Pandan Essence or Pandan juice

C
30g Melted Butter

D
120g Flour
1 tsp Double action baking powder

Method

1. Beat A until light and fluffy
2. Add B to A and mix well
3. Add C to the mixture

4. Fold in D to mixture
5. Pour batter into a 20cm round mould. 

6. Steam for 30 mins 
7. Enjoy!

Steam Cold Crab Teochew style

















Ingredient

A 1.8 to 2kg Sri Lankan Crab (Must be alive!) (Better if its female for the roe)
2 stalk spring onion
2 tbsp Shaoxing wine
4 thin slices ginger, thinly sliced into strips

Method

1. Leave crab in the freezer for about 20 minutes.
2. After its been knock out, peel off its shell from its back (Just above its 2 back legs)
3. Remove gills and discard. Scrub the shell thoroughly. 
4. Arrange Crab on a steaming plate, sprinkle 1 stalk chopped 1 inch length spring onion, wine and ginger over the crab.
5. Steam for 12 - 15 minutes, depending on the sizr. Remove spring onion and ginger. 
6. Remove and drain, keeping the juices aside. Keep in refrigerator to chill for about 2 hours
7. When serving, heat up the crab juices and sprinkle in with new chopped spring onions. Use this as a dip.
8. Serve the crab directly from the fridge.
9. Enjoy!

Yoghurt Batter Dumplings with Ham and cheese (Uzbekistan Dumplings)

















I learnt this recipe from "Secret Meat Buisness" from Food Network Asia. I immedately made it for tea-break the day i watched the show.

Ingredient

1 Cup Plain Yogurt
1 Cup Flour
Slices of Picnic Ham
Slices of Cheddar Cheese
Flour for dusting during rolling
Oil

Method

1. Mix Yogurt and Flour together and form a dough
2. Using a rolling pin, roll out the doughto about 1 cm thickness
3. Use a round cutter or a glass, cut out round shapes
4. Wrap each piece of dough with ham and cheese.
5. Pan Fry the dumplings till golden brown
6. Enjoy!

Chinese Dimsum Shao Mai (燒賣) Recipe 2

















 


















This is a famous Cantonese Chinese snack, called 燒賣. Its found in virtually all chinese restaurants in south east asia. My version is different from the restaurant's chefs that i use ready made wanton wrappers to make. Considered as one of the top 3 famous dimsum, this is the easiest of the 3. The other 2 being the Prawn Dumpling (蝦餃) and Char Siew Bao (叉燒飽)

Ingredient
 
1 packet wonton wrappers
500g Minced Pork
200g Prawns, finely chopped
1 stalk Spring Onion, chopped

Marinade

1 egg 
1/4 cup of water
1 tbsp sesame oil
1 1/2 tbsp soy sauce
1/2 tbsp sugar
1 tbsp oyster sauce
1 1/2 tbsp cornstarch
1/2 tsp pepper

Method

1. Mix the marinade in a bowl, big enough to hold the Pork and Prawns
2. Place Pork and Prawns in the marinade with spring onions.
3. Put the filling by using a teaspoon into the wanton wrappers
3. Steam the 燒賣 for around 15 minutes.
4. Enjoy!

Steam Banana Cupcakes

















Ingredients

A
3 Eggs
160g Sugar

B
250g Banana, mashed using a fork
1/4 tsp Salt

C
50g Milk

D
240g Flour
2 tsp Double action baking powder
1/2 tsp Baking Soda

E
90g Oil (Corn/Canola/Normal) 

Method

1. Beat A until thick
2. Add B to A and mix well
3. Add C to the mixture
and mix well
4. Add in D to mixture and mix well
5. Add in E to mixture and mix well
6. Pour batter into a Cupcake moulds to 3/4 filled
7. Steam for 20 mins 
8. Enjoy!

Cream of Broccoli Soup

















Ingredients

2 clove Garlic, sliced
500g Broccoli, Chopped
salt
freshly ground black pepper
50ml Extra Virgin Olive Oil
1 cup Water 
Parmesan Cheese, Grated or Shaved (Optional)

Method

1. Infused about 50 ml Extra Virgin Olive Oil with the Garlic overnight (Or use Ready-made Garlic infused Extra Virgin Olive Oil)
2. Heat infused Extra Virgin Olive Oil in pan
3. Add the broccoli and cook stirring for 2 minutes. Add water and cook for another 4 minutes.
4. Purée the broccoli with the liquid using a blender and transfer the liquid back to the pan. 
5. Allow to simmer and  season with salt and pepper to taste. Add some water (or milk) if needed to reach the right consistency.
6. When serving, add a few drops of olive oil and scatter the Parmesan Cheese
7. Enjoy!

Open Face Steak Sandwich Trio (Steak and Mushrooms, Steak and Egg, Steak and Cheese)

















Spoilt for choice on what to have when you crave for sandwich? Why not have a Sandwich Trio? Better still, make it a Steak Sandwich Trio!

Ingredient

500g beef chuck tender (This is selected due to cost and texture)
3 Tablespoons extra-virgin olive oil
1 teaspoon Rosemary (Dried), more if you like.
1 teaspoon black pepper
2 teaspoons sea salt 
Sandwich Loaf
Sliced Cheddar Cheese
Eggs
200g White Button Mushroom, Sliced
Butter


Method

1. Pour olive oil into skillet under medium to high heat.
2. Salt and pepper both sides of beef.
3. Brown all sides of roast. (You just want to get a nice brown coating on your meat for flavor.)
4. With a pointy-knife, poke about one dozen holes into top and bottom of the roast. This will allow juices to drain into roasting pan during oven cooking
5. Place roast into baked pan. Now add Rosemary, salt and pepper to top of roast.
6. Place roast into preheated oven to 180 degrees. 500g roast takes about 25 minutes to cook. I like my roast done between medium and medium rare. (The photo shows medium rare)
7. Play with the timing and temp to achieve your desire done-ness.
8. In a pan, heat up a knob of butter and soften the mushrooms till they turn dark brown.  
9. In another Pan, Fry the egg.
10. Assemble 3 sandwich loaf bread with the following combination -  (Steak and Mushrooms, Steak and Egg, Steak and Cheese)
11. Enjoy!

Apple and Raisin Pie

















This is a classic Apple Pie Recipe. I been wanting to do a real Pie for a long long time before i stumble upon this recipe. Its my first time making a Pie from scratch but it will not be the last. 

Ingredients

Pastry
225g Plain Flour
140g Butter
85g Castor Sugar
Zest of 1 Lemon
2 Egg Yolks
Pinch of Saly

Apple Filling 
Small knob of Butter
4 Green Apples
1 Red Apple
3 tbsp Brown sugar (I use Muscovado)
Zest of 1 Lemon
50g of Raisins
1 Egg Yolk
30ml Milk

Method

1. Pre-heat oven to 180 Degrees
2. Combine the Flour, Butter, Sugar and Lemon Zest to form a dry dough
3. Add in Salt, Egg Yolks and few drops of Water to knead into a Pie Dough
4. Divide the Dough into 2. Roll 1 of the dough into a round shape of about 21 - 22 cm diameter
5. Lay the dough into a buttered 20cm Pie Pan/Dish, gently push the dough down to form the base of the Pie.
6. Store the Pie Pan/Dish (covered with layer of foil) into the fridge while we prepare the filling.
7. Cut up the Apples into 8 pieces each.
8. In a non-stick pan, toss in Apples with Sugar, Lemon Zest and Raisins and a tbsp of Water.
9. Simmer under low heat for 5 mins and Apples are well infused with the Sugar.
10. Take it off the flame and cool down completely.
11. Remove the Pie Pan/Dish from the fridge, remove the foil and arrange in the Apples Filling
12. Roll the other 1 of the dough( Big enough to cover the top of the Pie Pan/Dish)
13. Lay the Dough over the Pie Pan/Dish and using a fork, make few punctures on the surface (Allow steam to come out)
14. Do a Egg wash for the surface 
15. Pop it into the Oven for 50 mins.
16. Enjoy Your Apple Pie!

Roti John

















Roti John is a common snack that's found in Singapore and Malaysia. Its easy to do and nice to eat. My son loves this as a snack every now and then.

Ingredient

1 Hotdog Bun
1 Egg
1/2 tsp Light soy
3 to 4 Hotdog cocktail or crab stick or your choice of anything

Method

1. Beat an egg, slice up the hotdog or crabstick and add in 1/2 tsp light soy
2. Heat an non-stick pan and fry the egg mixture
3. When you see the egg start to solidify at the surface, cut the Hotdog Bun into half and place it on top of the egg mixture in the pan
4. Once egg is done, serve with Tomato Ketchup
5. Enjoy!

Pan-seared Halibut with Sweet Sour Vinaigrette and Broccoli


















Ingredients

1 Halibut Fillet, Skin On
1 head Broccoli
Cooking Oil
Salt
Pepper

Vinaigrette

1 tsp mustard
2 tsp Balsamic vinegar
1 tsp soy sauce
1 tsp honey
Pinch pepper
1/4 cup Extra Virgin olive oil 

Method

1. Combine Vinaigrette ingredients in a mixing bowl. Drizzle in olive oil, whisking to an emulsion.
2. Prepare a non-stick frying pan and put on medium flame.
3. Season both sides of Halibut with salt and pepper.
4. Using a brush, brush cooking oil on skin of Halibut (Do not pour oil in the pan before adding fish.)
5. Place Halibut skin down on pan and fry for 4 minutes. (Do not touch it for 4 mins)
6. Blanch the broccoli in boiling water for 5 mins and immediately soak in Ice cold Water.
7. After 4 mins, flip over the Halibut and fry for another 1 min.
8. Remove fish, and arrange with broccoli florets and drizzle Vinaigrette all around and on the fillet.
9. Enjoy!

Blueberry Muffin

















Ingredients

250g flour
3 tbsp sugar
1 tbsp baking powder
Pinch of salt
1 egg
3 tbsp melted butter
3/4 cup milk
Handful fresh blueberries

Method
1. Preheat oven to 190 degrees.
2. Mix the dry ingredients together. 
3. Mix the egg, butter and milk together and combine the dry ingredients. 
3. Mix the blueberries into the batter.
4. Fill each paper muffin cups to three-quarters full. 
5. Bake for 30 minutes.
6. Enjoy!

Steamed three eggs (Egg, Salted Egg and Century Egg) with pork (三蛋蒸猪肉)

















Ingredient

300g minced pork
1 tsp light soy sauce
1 tsp sugar
Pinch of pepper
1 tsp sesame oil
1 tsp cornflour
2 large eggs, beaten
1 salted egg, chopped
1 century egg,
chopped
180ml water

Method

1. Mix together the minced pork with light soy sauce, sugar, pepper, sesame oil and cornflour. Keep marinated for about 2 hours. Spread it onto a steaming dish.
 
2. Mix the beaten eggs, salted egg, century eggs and water together and pour over the minced pork.
3. Steam in a steamer for 15 mins
4. Enjoy!

Mutton Curry Lasagna

















Ingredients

2 cans Mutton Curry, meat and potatoes mashed up
9 instant lasagne sheets
Block of Parmesan Cheese

Method

1. Place three lasagne sheets over base of pan or oven-ready dish. Spread half the mutton curry over lasagne sheets. Grate Parmesan Cheese all over.
2. For 2nd level, top with three lasagne sheets. Spread other half the mutton curry over lasagne sheets. Grate Parmesan Cheese all over.
3. Lay another 3 lasagne sheets and Grate Parmesan Cheese all over.
4. Pre-heat oven to 180C, and bake for 20 minutes covered with foil and uncovered for last 10 mins to get nice brown colour.

Tom Yum Chicken Chop with Roasted Potatoes and Courgette Salad


















Ingredient

2 Chicken Thighs, De-boned
4 Russet Potatoes, Cut into 8 pieces each
1 Courgette
Handful of Cherry Tomatoes
1 bottle of Tom Yum Paste
Extra Virgin Olive Oil
Dried Rosemary and Thyme
1 small tub of Plain Yogurt

Method

1. Wash and pat dry Chicken Thighs
2. Scoop 2 tbsp of the Tom Yum Paste and rub it all over the Chicken Thighs
3. Coat the Potatoes with Extra Virgin Olive Oil and 1 tsp each of Dried Rosemary and Thyme
4. Slice up the Courgette and half the Cherry Tomatoes, Combine with the Yogurt and keep in fridge
5. Pre-Heat Oven to 200 Degrees
6. Place the Chicken Thighs on a Pan and Roast together with the Potatoes for 15 mins
7. Assemble the Chicken, Potatoes and Courgette Salad as shown
8. Enjoy!

Hotdog and Crabstick Croissant

















Ingredient

1 packet of frozen ready made Puff Pastry
Some Hotdog Cocktail
Some Crabstick
1 Egg
Flour for dusting

Method

1. De-frost the puff pastry and roll out to 1cm thickness, preferbaly in a rectangle shape
2. Cut the pastry in long triangle shapes
3. Start with the base of the triangle, put hotdog cocktail or crabstick, roll the puff pastry
4. At the end, the sharp point of the triangle will be on top.
5. Break the egg and use it as egg wash and brush over the pastry.
6. Bake in the oven as per the temperature stated on the packaging
7. Enjoy!

Bittergourd, Pork Liver and Minced Pork Soup (苦瓜, 猪肝, 肉碎 汤)

















Ingredient

1 Chicken bone (Keep the Meat for stir fry or Stew)
200g Pork Liver
200g Minced Pork
1 large bittergourd, sliced thinly
Handful of dried scallops
2 Litres Water
1 Egg

Method

1. Scald the chicken bone in hot water for about 10 seconds
2. In a stock pot, pour in the water, Chicken bone and scallops, bring to a boil
3. Add in the bittergourd and lower the flame
4. On low flame for 2 hours, covered to retain moisture
5. 10 mins before serving, add in the liver, minced meat to soup
6. Just before serving, beat an egg, and slowly pour into the soup, slowly stirring the soup to create egg flower
7. Enjoy

Buffalo Wings coated with Thai Sweet Chilli Sauce


































I love Buffalo Wings when i go to pubs and have them as snack with my beer. But, they are always done the western way. I tried doing this at home the Asain way and it taste just as great!

"Today is 12th Singapore's General Election. Polling starts from 8am to 8pm. Results show will start on CNA from 9.30pm. Expected results show will last till 2 - 3 am. Ingredient

nocoupons
12 chicken wings
100g butter
1 small clove of minced garlic
60 ml Thai Sweet Chilli Sauce or any sauce you prefer
1/2 teaspoon salt

Method

1. Clean and pat dry the chicken wings and steam for 10 minutes. 
2. Lay the wings and place in the fridge for about 2 hours.
3. Preheat the oven to 220 degrees.
4. Roast on the middle rack of the oven for 20 minutes. Turn the wings over and cook another 20 minutes until the skin is golden brown.
5. In the meantime, melt the butter and garlic with Thai Sweet Chilli Sauce and salt into a bowl.
6. Remove the wings from the oven.
7. Coat the wings with the sauce. 
8. Enjoy!

Stir Fry Broccoli with Mushrooms


















This is a very good dish to lose weight. i managed to lose about 30 kg just by having this alone for every dinner for 3 months. Broccoli is a "Super" food which is very high in the good stuff (Vitamins). Its also a Negative Calorie Food. Thats how i managed to lose the weight by following my Broccoli Diet.

Ingredient

2 Broccoli, cut to florets
2 small clove Garlic, minced
4 large fresh Shitake mushrooms
Salt and Pepper to taste
Oil
50ml water or stock

Method

1. Heat up some oil in a frying wok on medium heat
2. Add in minced Garlic, stir for a while
3. Add in the Broccoli and stir fry for 5 mins, season with pinch of salt and pepper
4. Add in Mushrooms and water/stock and stir fry for another 5 mins
5. Enjoy!

Steam Light Cheese Cake

















Today is Republic of Singapore Navy's 44th Navy Day! To celebrate this occasion, i present to you this Cheese Cake! Wishing the RSN a happy birthday and many more years to come!

Ingredient

A
3 Eggs
100g Sugar

B
4 slices cheddar Cheese (Not the sandwich type)(More if you like cheesy)
125g Milk
80g Butter

C
220g Flour
1 tbsp Double action baking powder

Method

1. Beat A until slightly thicken
2. Heat up B until cheese melted (Use the double boil method).
3. Add B to A and mix well
4. Fold in sieved C to the mixture
5. Pour batter into a 20cm round mould. 

6. Steam for 30 mins 
7. Enjoy!
