Bake Salmon with Potato Salad
Ingredients (For 1)
1 piece 125g Salmon fillet / steak
5 Cherry Tomatoes
1 Bay leaf
Salt and Pepper
Potato Salad
5 Baby Potatoes, quartered
1 can Salmon / Tuna
Pepper
Method
1. Boil potatoes in salted water for 10 mins or until desired softness
2. Drain and chill in fridge
3. Preheat Oven to 180 Degrees C
4. Halve the cherry tomatoes, squeeze the juice into a bowl
5. Add bay leaf to juices, and marinade the salmon.
6. Lay a piece of aluminum foil, place salmon in centre.
7. Arrangetomatoes over salmon and season with salt and pepper.
8. Fold foil into a package, properly sealed.
9. Bake in oven for 15 mins
10. In the meantime, open a can salmon / tuna and mix into the potatoes.
11. Season with pepper and mix well.
12. Serve with Salmon

Baked Salmon with Potatoes and Broccoli
Ingredients
1 Pc Salmon ~125g
1 head Broccoli, chop to florets
2 Baby Potatoes
Salt and Pepper
Extra Virgin Olive Oil
Sauce
1 egg + 1 egg yolk
50g Pecorino cheese, finely grated
50g Parmesan Cheese, finely grated
Method
1. Boil potatoes for 10 mins in salted water
2. Lightly press the potato to break the skin, arrange on tray and drizzle Extra Virgin Olive Oil.
3. Season with salt and pepper.
4. Place salmon in foil with light drizzle of Extra Virgin Olive Oil, salt and pepper.
5. Bake salmon and potatoes in a pre-heated oven of 220 degrees C for 20 mins
6. Bring water to a boil, add in broccoli and drain after 3 mins. Season with light drizzle of Extra Virgin Olive Oil, salt and pepper.
7. To make sauce, whisk all in a bowl. Heat up a saucepan on low heat.
8. Pour egg mixture in saucepan and keep whisking.
9. Once u see the egg start to curdle, off flame and whisk continuously to prevent curdling.
10. Plate up and enjoy!

Salmon, Egg and Mushroom Pizza
Ingredients
2 piece Ready made wraps
5 white button mushrooms, thinly sliced
50g Salmon fillet, cut to thin slices
1 hard boil egg, sliced
Tomato paste for spreading on wrap
1 handful mozzarella cheese
Few leaves of rosemary
pepper to taste
Method
1. Preheat oven to 220 degrees C
2. Lay wrap on a baking tray
3. Apply tomato paste on wrap
4. Arrange Salmon, Egg and Mushroom on wrap
5. Scatter cheese and rosemary leaves over the condiments
6. Add pepper to taste
7. Bake in oven for 5 mins
8. Enjoy!

Bake Salmon Steaks with Courgettes
Ingredient
2 Salmon Steaks
1 Courgette, Sliced thickly
Salt and Pepper to taste
Extra Virgin Olive Oil
Method
1. Preheat oevn to 200 degrees C
2. Drizzle oil in pan and toss courgette to coat
3. Season with salt and pepper
4. Season both sides of salmon with salt and pepper
5. Place salmon above courgette and bake for 20 mins
6. Enjoy!

Bake New Zealand Baby Salmon Steaks
Ingredients
2 New Zealand Baby Salmon Steaks (Or normal if you can't get baby salmon)
1 Carrot, cut to bite sizes
1 Courgette, cut to bite sizes
Half a lemon
Salt and Pepper
Extra Virgin Olive Oil
Method
1. Preheat oven to 200 Degrees C
2. In a roasting Pan, drizzle Extra Virgin Olive Oil and season with Salt and Pepper
3. Add carrots and courgette, mix to coat
4. Pat dry salmon steak and lay in roasting pan
5. Drizzle salmon with Extra Virgin Olive Oil and season with Salt and Pepper
6. Bake for 20 mins
7. Enjoy with a drizzle of lemon juice!

Potato, Salmon and Pork Patty
Ingredients
100g Minced pork
150g Cooked potatoes, coarsely mashed
100g Salmon, cut into cubes
½ Small onion, chopped
½ Tsp Salt
¼ Tsp Black pepper
1 Egg
1 Tsp Corn flour
Method:
1. Mix all ingredients together and shape into patties
2. Heat pan and add little bit oil.
3. Drop potatoes patties onto pan to pan-fry on medium low heat.
4. After 2 minutes, flip onto other side and pan-fry 2 minutes too.
5. Once they are nice and golden brown, Remove from heat and serve.
6. Enjoy!

Baked Salmon with Baby Carrots
Ingredients
2 Fillets of Salmon
2 Tsp Light Soy
Extra Virgin Olive Oil
250g Baby Carrots
1 Tbsp Butter
1 Tsp Thyme, Chopped
Salt and Pepper to taste
Method
1. Wash and Pat dry Salmon Fillet, Preheat oven to 200 Degrees C
2. Oil a roasting pan with olive oil
3. Rest the fillets inside the pan and add 1 Tsp Lightsoy each to the fillets
4. Bake for 20 mins
5. In a pot, add in carrots and fill water just enough to cover.
6. Bring to a boil and cook for about 8 mins (Or to desired softness/doneness)
7. Drain, add in butter, dollop of olive oil, thyme, salt and pepper to taste, mix well.
8. Remove salmon from oven, and serve with baby carrots.
9. Enjoy!

Salmon & Pork Chawanmushi (茶碗蒸)
Ingredients
1 Egg
90ml Chicken Stock
5 thin slices Salmon
5 thin slices Pork Fillet
1 tsp Light Soy
Few Gou Qi Zi, soaked
Method
1. Mix Pork Fillet and Light Soy to marinade for a while
2. Add Egg into Stock and mix, not beat them together in a bowl
3. Add Salmon and Pork into the bowl
4. Steam for 10 minutes
5. Add in Gou Qi Zi and steam for another 2 minutes
6. Enjoy!
