Banana Brownie


















Ingredients

1  Egg
60g Butter

50g Sugar
A pinch of salt
60g Dark chocolate
30g Cake flour
1/3 tsp Baking powder

60g Walnut
1 Banana 

Method

1. Preheat the oven to 170°C. 
2. Line the pan tins with baking paper.
3. Sift the flour and baking powder together, set aside.
4. Melt the chocolate by putting in the bowl and place over the bowl of hot water.
5. Beat the butter with sugar and salt until light in color.
6. Pour the egg into the bowl and beat to combine.
7. Mix in the melted chocolate.
8. Pour the flour and walnut into the bowl. 
9. Fold until combine.
10. Put the batter into the prepared pan.
11. Arrange slices of banana on surface. 
12. Bake for 25 minutes.
13. Enjoy!

Banana Pancake



















Ingredients

1 Cup Self Raising Flour
1 Cup of (Milk + 1 Egg)
1 Banana 

Method

1. Mix Flour and Milk + Egg mixture together to form a smooth batter 
2. Heat up a non-stick pan
3. Using a ladle, scoop a ladle of batter and pour on pan
4. Pan fry the pancake with a total of 2 minutes per side till golden brown
5. Slice up the banana and arrange on the pancake
6. Drizzle honey or maple syrup over.

Banana Muffin

 

















Ingredients

250g Bananas, must be as ripe as possible
165g Castor Sugar
215g Butter
4 Eggs
1/2 Tsp Vanilla Essence
1/2 Tsp Cinnamon Powder
1/2 Tsp Baking Powder
230g Self Raising Flour

Method

1. Slice and mash the banana. Set aside.
2. Beat butter and sugar together till light and fluffy
3. Add Eggs and continue whisking
4. Add vanilla essence
5. Fold in sifted flour, baking powder and cinnamon powder into the wet mixture until evenly mixed.
6. Add in banana and mix well
7. Pre-heat oven to 180 Degrees C
8. Scoop mixture into muffin cups, up to the half way mark
9. Bake for 25 mins
10. Enjoy!

Banana Bread


















  

After reading Aspiring Bakers #7 Chocolate Delight (May 2011) - Round Up and with my entry there amonst the other aspiring bakers, made my hand itchy again. June's theme is "BREAD SEDUCTION" and i started thinking, 'What bread can seduce me?' Heehee, i remembered a good Banana Bread always brings a smile to my face, especially during the baking process as the aroma can really fill up the house. So this is my entry for Aspiring Bakers #8 for June 2011. For those interested to know more, go to The Sweetylicious

Ingredients

110g Butter
2 Eggs
2 cups Plain flour
1 Tsp Baking Soda
1 cup Mashed Ripe Banana (About 2 Bananas)
1 Banana, Sliced
1 cup Brown Sugar

Method

1. Preheat Oven to 180 Degrees C
2. Mix Butter and Sugar together until creamy
3. Add Bananas and Eggs to the butter
4. Sift Flour and Baking Soda into mixture and combine
5. Pour half mixture into a baking pan 
6. Arrange sliced bananas on surface
7. Pour other half mixture in pan over the bananas.
8. Arrange few slices of banana on surface of bread mixture, pressing them down 1 - 2 cm
9. Bake for 50 mins or until a skewer comes out clean
10. Allow to cool before serving
11. Enjoy!

Steam Banana Cupcakes

















Ingredients

A
3 Eggs
160g Sugar

B
250g Banana, mashed using a fork
1/4 tsp Salt

C
50g Milk

D
240g Flour
2 tsp Double action baking powder
1/2 tsp Baking Soda

E
90g Oil (Corn/Canola/Normal) 

Method

1. Beat A until thick
2. Add B to A and mix well
3. Add C to the mixture
and mix well
4. Add in D to mixture and mix well
5. Add in E to mixture and mix well
6. Pour batter into a Cupcake moulds to 3/4 filled
7. Steam for 20 mins 
8. Enjoy!
