Bitter gourd Soup (苦瓜汤)

















Ingredients:

750 g Chicken Bones
500 g bitter gourd
10 Beef Balls
A handful dried scallops
6 cups water
1 egg, beaten 
Salt

Method

1. Cut bitter gourd into half lengthwise. Remove/ scoop out all the seeds and white spongy stuff. Cut into thin slices.
2. Place all ingredients (less beef balls) in a pot. Simmer it for at least 2 hrs.
3. Season with salt to taste.
4. Add in beef balls and cook till done.
5. Slowly pour in the egg and stir the soup at same time.
6. Enjoy!

Bitter Gourd Chicken

















Ingredients

10 chicken wings, cut into pieces
1 medium size bitter gourd, cut into squares
1 Tbsp fermented black bean
4 Cloves garlic 
5 Slices ginger 

1 Tbsp sugar
4 Tbps light soy sauce
1 Cup water or more
Cooking oil 

Method

1. Finely chop garlic, ginger and fermented black beans. Marinade chicken with 2 Tbsp light soy and set aside for 20 mins.
2. Heat up some oil, stir fry garlic, ginger and black beans till fragrant, add in chicken pieces, bitter gourd, sugar and 2 Tbsp light soy, stir-fry briskly.
3. Add in water and bring to boil. 
4. Simmer at low heat for 20-25 minutes. 
5. Enjoy!

Stir Fried Egg with Bitter Gourd and Pork

















Ingredients

2 Eggs - beaten with a pinch of salt and pepper

150g Ground pork
1/2 Bitter gourd

Marinade for pork

1 Tbsp Light soy sauce
1 Tbsp Dark soy sauce
a little sesame oil
a dash of white pepper

Method

1. Add Marinade to pork and mix well. Set aside. 
2. In a pan heat some oil and fry bitter gourd till cooked, dish up.
3. Add little oil to the same pan, stir fry ground pork until cooked, pour in the cooked bitter gourd, stir fry briefly.
4. Pour in the beaten egg to the pork mixture and stir fry until egg is set.
5. Dish up and serve immediately.
6. Enjoy!
