Tuna Tomato Penne Pasta


















Ingredients
200g Penne Pasta
Block of Parmesan Cheese
1 tbsp Salt
Extra Vrgin olive oil
1 can Tuna Flakes, drained
Mayo
Pepper to taste 
For Sauce
Oil from the can of tuna
2 tbsp Extra Virgin Olive Oil
4 cloves Garlic, mince finely
20 Cherry Tomatoes, quartered
 
Method
1. Boil a pot of water and dump in 1 tbsp Salt and some drops of Extra Virgin Olive Oil
2. Once boiled, throw in Penne and boil for 10 to 12 mins or depending on your choice of done-ness. 
3. In a Pan, heat up Extra Virgin Olive Oil and stir fry garlic. Add in the oil from tuna.
4. Add cherry tomatoes and stir for 5 mins, making sure all the tomatoes are soft and mushy. 
5. Once Penne is done, drain and dump into the sauce.
6. Mix well in the pan and throw in half of the chopped Parsley.
7. Plate your Penne and scatter half of the chopped Parsley all over.
8. Grate Parmesan Cheese on top.
9. Mix tuna and mayo to your pref consistency and season with pepper.
10. Serve tuna mayo with pasta

Pasta Aglio, Olio e Peperoncino with Steak with Honey Mustard Dressing

Ingredients

1 Tbsp Aglio, Olio e Peperoncino for each Adult portion
Spaghetti of your choice (I used Angel Hair)
1 Chuck Tender Steak, approx 300g
Salt and pepper 
Extra Virgin Olive Oil

Honey Mustard Dressing

5 Tsp Honey
3 Tsp Dijon Mustard 

Method

1. Cook Spaghetti of your choice till Al Dente. Marinade steak with salt and pepper. 
2. In a pan, add about 2 Tbsp of  Extra Virgin Olive Oil and 1 Tbsp of glio, Olio e Peperoncino  per adult. In another pan, sear steak on both sides for about 5 mins each.
3. Once the Aglio, Olio e Peperoncino is heated through, add in the spaghetti and Ham. Let steak rest for 10 mins before slicing.
4. Mix pasta well and serve on plate. Arrange steak slices on pasta and drizzle honey mustard over.

Penne Pasta with Shrimp Kebab


















Ingredients

500g Penne Pasta
Block of Parmesan Cheese
1 tbsp Salt
Extra Vrgin olive oil
10 Shrimps wrapped in 10 slices of Streaky Bacon and put on skewer 

For Sauce

200g Streaky bacon, Slice into strips
2 tbsp Extra Virgin Olive Oil
4 cloves Garlic, mince finely
10 Cherry Tomatoes
1 bunch of Parsley, Chooped finely (Optional but reccomended)

Method

1. Boil a pot of water and dump in 1 tbsp Salt and some drops of Extra Virgin Olive Oil
2. Once boiled, throw in Penne and boil for 10 to 12 mins or depending on your choice of done-ness. 
3. In a Pan, heat up Extra Virgin Olive Oil and stir fry garlic. Add in bacon to release flavour.
4. Once bacon has released its flavour, add cherry tomatoes and stir for 5 mins. In another pan, sear the Shrimp and bacon till golden brown. Set aside.
5. Once Penne is done, drain and dump into the sauce.
6. Mix well in the pan and throw in half of the chopped Parsley.
7. Plate your Penne and scatter half of the chopped Parsley all over.
8. Grate Parmesan Cheese on top and add the shrimp kebab over them.
9. Enjoy!

Angel Hair Pasta with Bacon, Tomatoes and Poached Egg

















Ingredients

1 Pkt Angel Hair pasta
250g Good-quality Streaky bacon, cubed
1 Cup chopped onion
2 Cloves Garlic. minced
1 Can Diced tomatoes
Black pepper to taste
1 Tsp red chilli flakes
1 Egg for every serving
Grated parmesan cheese, to taste

Method

1. Cook pasta according to taste and done-ness (2 mins), drain and set aside.
2. Cook bacon in a large frying pan over medium heat.
3. Add onion and garlic until browned for 5 minutes.
4. Add remaining ingredients except parmesan and cook over high heat until juices have reduced by half. Poach egg by cracking in boiling water for 2 mins.
5. Add pasta, stir to coat, and transfer to a bowl. Scoop egg on top of pasta.
6. Sprinkle with parmesan.
7. Enjoy!

How to make Fresh Egg Pasta

Ingredients
1 Egg, beaten
1/2 Tsp salt
1 Cup All-purpose flour / Plain flour
2 Tbps water
Step 1 :  Make a well in the flour, add the salt, water and slightly beaten egg, and mix. 


  
Step 2 : On a lightly floured surface, knead dough for about 3 to 4 minutes. Place in a bowl and cover with a damp cloth for 1 hour to rest 
  
Step 3 : Roll the dough flat to desired thickness with rolling pin with some flour scattered all over 

















Step 4 : Cut the dough into the type of pasta you like. For me, its Fettuccine. 
Step 5 : Boil a pot of water, add some salt and oil. Cook Pasta for at most 3 minutes 

















Step 6 : Serve with your favourite sauce. For me, i made it into Ragù Alla Bolognese with Fettuccine

Italian Lamb Stew Penne Pasta

















Ingredients

500g Penne Pasta
1 Tbsp Salt 
Cooking Oil

Method

1. Boil a pot of water
2. Add in salt and drizzle some oil into the water
3. Cook Penne for about 11 mins
4. Drain and pour into  a bowl
5. Scoop Lamb Stew mixture over the Pasta
6. Enjoy!

Lamb Stew Recipe

1 kg lamb shoulder, cut in cubes
4 Tbsp Extra virgin olive oil
4 cloves Garlic, chopped
4 sprigs fresh Rosemary, chopped
1 red onion, sliced thinly
4 carrots, peeled and cut into circles
1 red Capsicum, cut into slices
3 Potatoes, unpeeled and quartered
2 can chopped tomatoes
1 cup Broth
1 cup Red wine
salt and pepper to taste
Plain Flour

Method

1. In a large pot, heat oil and brown lamb.
2. Add in garlic and rosemary and saute for 2 minutes.
3. Add carrots, potatoes, peppers, onions and tomatoes and stir. 
4. Add broth and wine and cook on low flame around 2 hours until meat is very tender.
5. Just before serving, add in Flour to reach the consistency that you like, adding 1 Tbsp at a time.
6. Enjoy!

Prawn Penne Pasta in Olive Oil Dressing


















Ingredients

500g Penne Pasta
10 Large Prawns
1 tbsp Salt
Extra Vrgin olive oil

For Sauce

200g Streaky bacon, Slice into strips
Generous Lugs of Extra Virgin Olive Oil
4 cloves Garlic, sliced
20 Cherry Tomatoes
1 bunch of Parsley, Chooped finely (Optional but reccomended)
Pepper to taste

Method

1. Boil a pot of water and dump in 1 tbsp Salt and some drops of Extra Virgin Olive Oil
2. Once boiled, throw in Penne and boil for 10 to 12 mins or depending on your choice of done-ness
3. In a Pan, heat up generous lugs of Extra Virgin Olive Oil and stir fry garlic. Add in bacon to release flavour and to brown them.
4. Once bacon has released its flavour, add cherry tomatoes and stir-fry for 5 mins.
5. Once Penne is done, drain and dump into the sauce.
6. Mix well in the pan, add in prawns and throw in the chopped Parsley.
7. Once Prawns turn pink and cooked, Plate your Penne and scatter half of the chopped Parsley all over.
8. Enjoy!

Ingredients

Mashed Sardine and Onions Fettuccine


















Ingredients 

1 Big can Sardines
1 500g Packet of Pasta (I use Fettuccine)
1 Onion
1 hard boil egg
2 tbsp Sugar
Salt and Pepper
Oil

Method


1. Chop up 1 Onion
2. Boil a litre of water with drops of oil and handful of salt, empty 1 packet of pasta to cook to Al Dente (about 11 mins)
3. In a pan, fry the onions until they sweat
4. Add in the can sardines and simmer
5. Add sugar to the sardines and mash them up in the pan
6. Lay the pasta in your plate and pour the sardine sauce over
7. Slice the hard boil egg into half and place by the side
8. Pepper to taste
9. Enjoy!

Crab Pasta


















Ingredients 

1 LIVE Sri Lanka Crab
1 Packet of Pasta (I use Linguini)
1 head of broccoli
1 can ready-made Pasta Sauce (Buy any that you like)
Salt and Pepper
Oil

Method

1. Clean and cut up the crab and steam for about 15 minutes
2. Boil a litre of water with drops of oil and handful of salt, empty 1 packet of pasta to cook to Al Dente (about 11 mins)
3. Blanch the broccoli for 5 minutes in hot water and place them into a ice bath
4. Once the crab is steam, extract the flesh from then body and keep the pincers (See Photo)
5. Coat the pasta with your sauce (warm the sauce) and place them into your plate
6. Add your crab meat and broccoli and the 2 Pincers
7. Pepper to taste
8. Enjoy!
