Braised Chicken with Mushrooms


















Ingredients

2 drumsticks and 3 wings or half a chicken, chopped to pieces
10 chinese mushrooms, soaked in water till soft 
15 slices ginger
3 cloves garlic, lightly crushed or thinly sliced
1 tbsp hua diao wine
3 tbsp soy sauce
3 tbsp dark soy sauce
1 tsp sugar
Salt to taste

Method

1. Cut chicken into pieces, marinate with soy sauce
2. Heat up 2-3 tbsps oil, stir-fry ginger and garlic until fragrant. 
3. Add in chicken pieces and stir-fry for few minutes.
4. Add in hua diao wine, soy sauce (from the marinade), dark soy sauce, sugar.
5. Stir-fry for 1 minutes. Add mushrooms. Cover and simmer for 20 minutes.
6. Open the lid every 5 minutes and stir-fry. Add water if necessary. 
7. Add salt to taste. 
8. Enjoy!

Salmon on Sweet Potato Mash and Potatoes



















Ingredients


1 Salmon Fillet
2 Potatoes, peeled and quartered 
2 medium sweet potatoes, peeled and cut into 2-inch chunks
1/2 cup Milk
Extra Virgin Olive Oil 
Coarse salt and ground pepper

Method

1. Place sweet potatoes and potatoes in steamer and cover; steam until tender, 20 minutes.
2. Drain, and return sweet potatoes to saucepan. Set aside potatoes.
3. Meanwhile, in a small saucepan, bring milk to a simmer and remove from heat.
4. Add to drained sweet potatoes, and mash just until smooth with 3 Tbps Olive oil
5. Season with salt and pepper. 
6. Add 2 Tbps of Olive Oil to potatoes and toss to coat. Season with salt and pepper.  
7. Pan fry salmon for 4 minutes on skin side (Till skin is crisp) and 1 minute on flesh side.
8. Arrange salmon on top of mash and serve with potatoes.
9. Enjoy!

Roast Broccoli with Ham


















Ingredients

2 stalks Broccoli
2 slices Ham, sliced 
Extra Virgin Olive Oil
Salt and Pepper

Method

1. Cut Broccoli into Florets
2. Coat Broccoli with olive oil and arrange in roasting pan.
3. Season with salt and pepper and add in slices of ham.
4. Roast at 180 degrees c for 20 minutes
5. Enjoy!

Kway Teow Aglio, Olio e Peperoncino


















Ingredients

1 packet kway teow noodles
1 tsp Aglio, Olio e Peperoncino
1 clove garlic, thinly sliced 
1 large sausage, skin removed and meat crumbled
Extra Virgin Olive Oil

Method

1. Heat up 3 tbsp Extra Virgin Olive Oil
2. Add in garlic and crumbled sausage
3. Once meat is cooked, add in  Aglio, Olio e Peperoncino
4. Mix well, and add in kway teow
5. Over high heat, stir for 1 min till all kway teow coated with oil and  Aglio, Olio e Peperoncino
6. Enjoy!

Willie's Wonky Chocolate Factory Cloud Forest Chocolate Cake





















Ingredients

180g cacao, finely grated
250g unsalted butter
125g golden caster sugar
50g light muscovado sugar
6 eggs
100g ground almonds

METHOD

How to make Willie's Wonky Chocolate Factory cloud forest chocolate cake

1. Preheat oven to 160ºC. Line a 25cm spring-formed cake tin with baking paper.
2. Melt the cacao and butter by placing them, along with half the caster sugar and all of the muscovado sugar in a large heat-proof bowl. Sit the bowl over a pan of simmering water.
3. Meanwhile, beat the eggs with the remaining caster sugar until they have tripled in size.
4. When the cacao and butter has melted, add the almonds and stir to combine.
5. Gradually fold the cacao mixture into the eggs. Tip the cake mix into the prepared tin.
6. Bake for 25 minutes, then leave to cool in the tin.
7. The cake can be iced by heating 500ml double cream with 150g caster sugar. Stir in 180g grated cacao, leave to cool and spread over the cake.

Herring, Zucchini and Onion salad


















Ingredients

1 can cured Herring (From IKEA) or you can use smoke salmon
1 Zucchini. diced
1 red shallot, chopped
150g Yoghurt 

Method

1. Mix Zucchini and shallots in a bowl
2. Add in yoghurt, mix well
3. Serve in a bowl with few slices of cured herring
4. Enjoy!

Pan seared Steak on Mash Sweet Potatoes



















Ingredients

2 medium sweet potatoes, peeled and cut into 2-inch chunks
1/2 cup Milk
3 Tbps Butter
1 Sirloin Steak
Coarse salt and ground pepper

Method

1. Place sweet potatoes in steamer and cover; steam until tender, 20 minutes.
2. Drain, and return to saucepan.
3. Meanwhile, in a small saucepan, bring milk, butter to a simmer, stirring to combine; remove from heat. 
4. Add to drained sweet potatoes, and mash just until smooth
5. Season with salt and pepper.
6. Pan fry steak for 4 minutes on both sides (Well Done) 
7. Slice up steak and arrange on top of mash
8. Enjoy!

Bake Salmon Steaks with Courgettes

















Ingredient

2 Salmon Steaks
1 Courgette, Sliced thickly
Salt and Pepper to taste
Extra Virgin Olive Oil

Method

1. Preheat oevn to 200 degrees C
2. Drizzle oil in pan and toss courgette to coat
3. Season with salt and pepper
4. Season both sides of salmon with salt and pepper
5. Place salmon above courgette and bake for 20 mins
6. Enjoy!

Mushroom Omelette

















Ingredient

6 White button mushrooms, sliced
2 Slices of luncheon meat, diced
3 Eggs
Knob of Butter
Salt and Pepper to taste

Method

1. Heat up a wok and add in butter
2. Add in luncheon meat and mushrooms
3. Once mushrooms are soft and turn brown, Pour in eggs
4. On medium heat, cook till the egg surface start to solidify
5. Flip omelette over and cook on other side for 1 minute
6. Enjoy!

超省时生活- Baked Pork Burger Patties



















Ingredients

100g minced pork
1/4 big onion (minced)
1/2 packet of a 60g prawn cracker (I used Oishi Prawn Cracker)
2 Tbsp mayonnaise

Method

1) Pre-heat the oven at 180°C.
2) Put the prawn cracker in a plastic bag and crushed it.
3) Add the minced pork, onion and mayonnaise into the plastic bag.
4) Mix well and mould them into patties
5) Place each patty on a piece of aluminium foil.
6) Bake at 180°C for 15 minutes.
7) Enjoy!
