Mapo Tofu (麻婆豆腐)


















Ingredients

600 g silken firm tofu
300 g minced pork or beef
1 tbsp cooking oil
2 tsp minced garlic
2 tbsp spicy soy bean sauce
2 tsp soy sauce

2 tsp sugar
Salt
200 ml chicken stock
1 tbsp cornflour + 2 tbsp water

2 tbsp Szechuan chilli oil
1 tsp ground Szechuan pepper
2 tbsp chopped spring onions 

Method

1. Sliced the tofu into 2cm cubes.
2. Heat a pan of water until it reaches just below boiling point. Add tofu cubes and scald for 2 minutes.
3. Remove, drain and set aside.
4. Heat a tbsp of cooking oil in a wok under medium high heat. Add minced pork or beef until it's browned and cook.
5. Add garlic and spicy bean sauce and stir-fry for a further 1-2 minutes until fragrant.
6. Reduce heat to medium low heat. Add tofu, soy sauce, sugar, salt and chicken stock. Give it a gentle stir, cover with lid and bring it to a slow simmer.
7. Remove the lid, add the cornflour water, give it a quick stir until mixture is thicken.
8. Turn off the heat, sprinkle with ground Szechuan pepper and chopped spring onions. Ladle the Chilli oil.

Steam Minced Pork with Dong Cai (冬菜蒸猪肉)



















Ingredients

300g Minced pork with fats (五花肉)
1 Tbsp Light soy sauce

1 Egg 
50g Dong Cai (Soak Dong cai in water for 15 minutes, wash and squeeze dry. Chop Dong Cai to smaller pieces)
2 stalk Spring Onion, chopped



Method 

1. Split meat and dong cai into 2 portions
2. In a pan, drizzle some oil on the base. Lay 1 portion of pork.
3. Sprinkle 1 portion of dong cai evenly over the pork.
4. Repeat another portion of pork and dongcai.
5. In a bowl, beat egg and spring onion together.
6. Pour mixture on the pork, evenly spreading all over the pork surface 
7. Steam at high heat for about 20 mins.

Maltesers Chocolate Cupcake




































Ingredients (makes 1 Dozen)

250g Butter, room temperature
150g Caster sugar
4 Eggs
200g Self-rising flour
1 packet Maltesers
2 Tbsp Cocoa powder 
Rainbow rice 

Method

1. Preheat the oven to 180C. 
2. Put the butter and sugar in a mixing bowl, and beat together until light and fluffy.
3. Add 1 egg at a time, combine well.
4. Add in the flour and fold till well combined.
5. Add in cocoa powder, mix well.
6. Spoon the mixture into the paper cases, about 1/4 of the case. 
7. Arrange Maltesers (I add 3 into each cup) and spoon more mixture till it reaches 3/4 of cup. For my son, i add rainbow rice on the top for colour.
8. Bake the cupcakes in the oven for 20mins.

Ratatouille



















Ingredients

1 purple eggplant, cubed

2 zucchinis, cubed

1 onion, quartered
1 carrot, cut to bite size pieces
2 stalk celery, cut to bite size pieces
3 cloves garlic, chopped
200g tomatoes, peeled and cubed

100g tomato puree
50 to 100ml dry red wine* 
1 sprig rosemary 

1 sprig thyme 

1 sprig Parsley
3tbsp olive oil
Salt and freshly-ground pepper to taste



Method


1. Heat the oil in a heavy-bottom pan. Add the eggplant and cook until lightly browned. Remove and set aside.

2. In the same pan, cook the zucchinis the same way. Remove and set aside.
3. In the same pan, cook the onion until aroma. Add carrot and celery and cook until tender, add garlic, eggplant, zucchini, tomato and tomato puree.
4. Add rosemary and thyme leaves to the ratatouille. Simmer over low heat for 1hour. Stir from time to time. Add in red wine to simmer to the consistency you like (*Optional but it brings more flavour)
5. Season to taste with salt and pepper.

6. Remove from heat. Sprinkle with chopped parsley. Serve immediately.

Spaghetti Bolognese



















Ingredients
240g Spaghetti

250g Minced beef 
1 Tbsp olive oil

3 Cloves garlic, Whole
10 Tbsp Pasta tomato puree
1 Tbsp chopped parsley
15 Cherry tomatoes, sliced to half
Block of Cheddar or Parmesan
Salt and Pepper

Method


1. Cook the spaghetti in a pot of boiling salted water according to the timing on the package. Drain and set aside.
2. In a saucepan, heat oil and saute garlic & parsley.
3. When fragrant, add beef and fry for 2 minutes, breaking them up.
4. Add tomatoes, tomato puree and stir evenly. 
5. Once sauce is bubbling, taste and season with salt and pepper.
6. Add the cooked spaghetti with the meat sauce and mix well
7. Serve on a plate and grate generous amounts of Cheddar/Parmesan.

Chicken, Celery, Carrots and Tomatoes Beer Stew


















Ingredients

2 whole chicken drumsticks

1 onion, chopped finely
2 cloves garlic, chopped finely

1 tomato, chopped finely

2 Stalk Celery, chopped
1 Carrot, chopped 
330ml beer

1 bay leave

1 tablespoon vegetable oil
2 tablespoons butter
Salt and black pepper, to taste


Method


1. In a medium bowl, marinate chicken pieces with salt and pepper, set aside for 10 to 20 minutes.
2. Heat up oil in a frying pan. Pan-fried both sides of the chicken pieces until golden brown. Dish out and set aside.
3. Melt butter in the frying pan, saute onion and garlic until fragrant. Add Celery and carrot and stir fry for 5 minutes. Add chicken pieces and then make a few quick stirs. 
4. Add beer, tomato and bay leave. Cover and simmer for about 30 minutes.
5. Season the dish with salt and black pepper.

Smooth and Creamy Mash Potatoes


















Ingredients

4 Russet Potatoes, Cut to 1" cubes (It mush be Russet Potatoes, nothing else)
2 Tbsp Margarine or Butter
Milk (Amount depend on your preferred consistency)
Salt and Pepper 
Extra Virgin Olive Oil 

Method

1. Put potatoes in a pot and fill with water and a generous pinch of salt.
2. Bring to a boil and cook till potatoes slide off a knife when poked. 
3. Drain, and add in margarine and milk.
4. Mash with a masher till smooth and creamy.
5. Season with pepper and drizzle Extra Virgin Olive Oil over

Banana Pancake



















Ingredients

1 Cup Self Raising Flour
1 Cup of (Milk + 1 Egg)
1 Banana 

Method

1. Mix Flour and Milk + Egg mixture together to form a smooth batter 
2. Heat up a non-stick pan
3. Using a ladle, scoop a ladle of batter and pour on pan
4. Pan fry the pancake with a total of 2 minutes per side till golden brown
5. Slice up the banana and arrange on the pancake
6. Drizzle honey or maple syrup over.

猪尾花生莲藕汤 Lotus Root Soup, with pig's tail and peanut



















Ingredients

1 pig's tail, cut into pieces 
200g peanuts, soaked for 2 hours
500g lotus root, cut into think slices
2000ml boiling water
Handful of dried scallops

Method

1. Blanch pig's tail in boiling water for a short while. Remove and clean. 
2. Place all ingredients into a soup pot.
3. Simmer for 3 hours. 
4. Enjoy!

Coca-Cola Chicken Drumlets


















Ingredients


8 mid joint chicken wings (about 320g)
1 tbsp cooking oil
200ml regular Coca-Cola (do not use diet or flavoured Coke)
200ml water

Marinade

1 tsp light soy sauce
1/2 tsp dark soy sauce
1 tsp sesame oil

Method


1. Marinade the chicken wings in  for 2 hours
2. Heat oil in wok or saucepan and brown chicken on both sides.
3. Add Coca-Cola, water and leftover marinade sauce. 
4. Simmer until the sauce is reduced to a thick, sticky syrup. Stir frequently.
5. Enjoy!

Hamburger Steak with Caramelized Onions



















Ingredients

300g Quality mince Beef
2 Onions, chopped 
1 Tsp Freshly chopped Rosemary 
Salt and Pepper 
Knob of Butter 
Djion Mustard
Cheese Slices 
Oil

Method

1. Marinade beef with rosemary, salt and pepper to taste. 
2. Mould into hamburger steaks (approx 150g each) and keep chilled for about 1 hour
3. Heat up a pan and add butter followed by onions.
4. Stir the onions once a while to slowly caramelize them, about 10 minutes
5. In another pan, heat up some oil and lay the hamburger steaks to fry.
6. Depending on your pref, cook to your desired done-ness. I use only 1 min per side. 
7. Serve with Cheese, Onions and djion mustard

Onion Omelette


















Ingredients

1 Large Red Onion, Thinly sliced
2 Eggs, Beaten
1 Tsp Light Soy
Black Pepper
Oil

Method

1. Heat up a pan and add in onion slices to fry for 5 mins till soft
2. Mix Light soy into eggs and pour over the onions
3. Once egg starts to solidify on the surface, flip over and pan fry for another minute.
4. Finish off with black pepper
5. Enjoy!

Stir Fry Broccoli with Carrots and Chicken Fillet


















Ingredient

2 Broccoli, cut to florets and stems separated
2 small clove Garlic, minced
2 Carrots, sliced
Handful of dried prawns, soak in 100ml water
100g Chicken Fillet, season with salt and pepper and dice to 1 cm cubes 
Salt and Pepper 
Oil
100ml Dried Prawns water

Method

1. Heat up some oil in a frying wok on medium-high heat
2. Add in minced Garlic and dried prawns, stir for a while
3. Add in the Broccoli stems and carrots, stir fry for 5 mins
4. Add in florets with the water, stir fry for 5 mins 
5. Add in Chicken fillet and stir fry for another 5 mins

Tomato Basil Salad


















Ingredients

2 Big Tomatoes, Diced
5 Basil Leaves, Chopped
Drizzle of Extra Virgin Olive Oil (Depends on your taste. Add more or less to your taste)
Pepper

Method

1. Mix Tomatoes and Basil leaves in a salad bowl
2. Drizzle in Extra Virgin Olive Oil and mix well.
3. Season with black pepper
4. Enjoy!

Steam Mince Pork Egg


















Ingredients

3 eggs, beaten

150g minced pork
1/3 cup chicken stock
1 Tbsp light soy sauce
1 Tbsp Shaoxing rice wine

1 Tsp sesame oil
White pepper
Chopped scallions

Method


1. Beat the eggs in a bowl. Mix in the minced pork.
2. Add in the rest of the ingredients.
3. Beat everything together with a fork.
4. Transfer the mixture to a shallow heat-proof dish.
5. Steam for 15 mins
6. Enjoy!
