PapaCheong's Chocolate Chip Cookies

















Ingredients

2 Cups Flour (For best results, I use Bake King's Top Flour)
A pinch of salt
1/2 Tsp baking soda
150g Salted Butter, softened
2/3 Cup Brown Sugar
1/2 Cup Castor Sugar
2 Tsp Vanilla Essence
1 Egg
200g Chocolate Chips

Method

1. Combine the flour, salt, and baking soda, and set aside. (This will be called dry ingredients)
2. Cream butter and sugars. 
3. Add vanilla and the egg and mix to combine. 
4. Add the dry ingredients and stir to combine. 
5. Mix in the chocolate chips. 
6. Scoop by ice-cream scoop or tablespoonfuls onto a cookie sheet and bake at 200 Degrees C for 15 min.
7. Enjoy!

*My wife said these cookies taste just like those sold at Subway!

Rösti with Cheese Sausage and Sour Cream

















Ingredient


2 medium Russet Potatoes, shredded
2 Cheese Sausages (NTUC Cheese Sausage taste Good)
1 Tbsp Sour Cream
Salt
Cooking Oil

Method

1. Boil a pot of water, add in salt and boil shredded potatoes for 5 mins
2. Drain and squeeze dry from moisture
3. Heat up non-stick pan on medium heat and add 2 tbsp of oil
4. Gather enough shredded potatoes and sprinkle all over the pan to form a potato patty
5. On medium heat, leave it untouched for 8 mins
6. Flip over, and fry for another 8 mins
7. In a seperate pan, grill your sausages for 5 mins
8. Once Rösti is done, plate them with 2 sausages
9. Scoop a Tbsp of Sour Cream on the side
10. Enjoy!

Lazy Lunch of Baked Yellow Courgette, Cheese Sausage and Egg

















Ingredients

2 Cheese Sausage
1 Yellow Courgette, Cut to thick pieces
1 Egg
Salt and Pepper
Extra Virgin Olive Oil

Method

1. Crack 1 Egg into a Ramekin, season with pepper and Olive Oil.
2. Arrange sausage and courgette in a pan, Drizzle Olive Oil over them.
3. Sprinkle salt and pepper over them to taste.
4. Pre heat oven to 180 degrees C
5. Bake for 20 mins
6. Enjoy!

Mushroom and Spinach Quiche

















Ingredients

4 eggs
1 bunch or packet of Spinach, chopped
10 Mushrooms (Any type you fancy), Chopped into 1cm cubes
4 sheets of Spring Roll (Popiah) skin
2 cloves Garlic, minced
Block of Parmesan Cheese
Salt and Pepper
Oil

Method

1. Preheat oven to 200 Degrees C
2. Heat up a pan and add oil
3. When oil is warmed through, add in minced Garlic.
4. Stri Fry mushrooms till brown and soft
5. Add in Spinach and fry till cooked
6. Remove from heat, set aside
7. In a Pie Pan, Lay the Spring Roll skin in alternate positioning 90degrees to prevent the egg liquid to seep 
through
8. Scoop the mushrooms and spinach into the pan
9. Beat the 4 eggs and pour into the pan
10. Shave generous shavings of Parmesan Cheese on top (Up to your choice)
11. Bake in oven for 30 mins
12. Enjoy!

Avocado, Cherry Tomatoes and Yoghurt Salad

















Ingredients

1 Avocado
10 Cherry Tomatoes
150ml Plain Yoghurt

Method

1. Cut, peel and chop up an avocado
2. Cut cherry tomatoes into half
3. Mix avocado and cherry tomatoes in a mixing bowl
4. Add in Yoghurt
5. Mix well
6. Enjoy!

Roast Potato With Parsley


















Ingredients

5 Large Potatoes, washed with skin on
4 - 5 Sprigs Parsley
Generous lugs of Olive Oil
Sea Salt
Black Pepper

Method

1. Preheat the oven to 200˚C.
2. Boil the potatoes with 1 tsp of salt for 5 mins. Drain and cut the potatoes into quarters or leave whole if smaller.
3.  Arrange the potatoes in a baking tray and scatter Parsley over them. Then drizzle the olive oil and sprinkle some sea salt and black pepper.
4. Roast the potatoes for 50 mins until the potatoes turn crispy and the flesh are tender.
5. Enjoy!

Mango Muffin

















Ingredients

250g Mango (I use Thai Rainbow Mango as they are in season)
165g Castor Sugar
215g Butter
4 Eggs
1/2 Tsp Baking Powder
230g Self Raising Flour

Method

1. Slice and mash the mango. Set aside.
2. Beat butter and sugar together till light and fluffy
3. Add Eggs and continue whisking
4. Fold in sifted flour and baking powder into the wet mixture until evenly mixed.
5. Add in mango and mix well
6. Pre-heat oven to 180 Degrees C
7. Scoop mixture into muffin cups, up to the half way mark
8. Bake for 25 mins
9. Enjoy!

Cinnamon Rolls

















Ingredients

1/4 cup warm water
2 Tsp active dry yeast
2 Tbsp and 1
Tsp Castor sugar, Separated
1 Egg
1/3 cup
Low fat sour cream
2 1/2 Tbps butter, melted
1 Tsp baking powder
1/2 Tsp salt
2 Cups Plain flour
1/4 cup Brown sugar
1 1/2 Tsp Cinnamon Powder

Method

1. Whisk together water, yeast and 1 teaspoon castor sugar in a large mixing bowl; allow to sit 5 minutes.
2. Stir in additional 2 tablespoons castor sugar, egg, 1/3 cup sour cream, 1 tablespoon melted butter, baking powder and salt until well combined. 
3. Stir in flour until well combined and a dough ball forms. Lightly cover bowl and allow dough to rise for 45 minutes.
4. Roll dough out into a thin rectangle on a floured surface, using a floured rolling pin. Brush dough with 1 tablespoon melted butter. 
5. Sprinkle brown sugar and cinnamon on top. Roll dough up and slice into 12 equal pieces. Place on a large greased cookie sheet. Lightly cover and allow dough to rise for 30 minutes.
6. Heat oven to 180 degrees C.
7. Brush cinnamon rolls with remaining 1/2 tablespoon melted butter. 
8. Bake 20 minutes or until golden brown. 
9. Enjoy!

Braised Chicken with Ginger & Wine



















Ingredients

4 Chicken drumstick, chopped into bite size pieces 
5 pieces of woodear (soaked in water, then sliced into bite size portions)
Knob of Ginger, julien
1/2 cup water
3/4 cups of Rice wine
3 Tbs cooking oil
2 Tbs sesame oil
Light Soy
 
Method
1. Heat your wok till hot and add in vegetable oil and sesame oil
2. Stir fry the ginger till brown and fragant
3. Add in chicken and woodear and stirfry until cooked
4. Add in 1/2 cup water and reduce heat to just below boiling point
5. Add in Rice wine and simmer for half hour
6. Add in light soy to taste just before serving.
7. Enjoy!

Roast Root Vegetables (Potato, Onion, Pumpkin and Capsicum)

































I love Roast Vegetables, except that i love eating them as a main and not as side dishes. They are full of flavour and so healthy! Look at the colours!

Ingredients

1 Large Russet Potato, Chop to quarter or cubes, skin on
1 Large Red Onion, Slice to 1cm thickness
Half a Pumpkin, Cut to cubes
1 Orange (or Any Colour) Capsicum, Chop to pieces
Extra Virgin Olive Oil
Salt
Pepper
1 Tsp Dried Thyme

Method

1. Mix all root vegetables together, tossing them with Extra Virgin Olive Oil and thyme
2. Arrange them nicely in roasting pan (I need 2). Do not lay them on top of each other.
3. Sprinkle pepper and salt over them (to taste)
4. Pre-heat oven to 200 degrees C.
5. Roast them for 30 mins
6. Enjoy with a glass of Red Wine!

This was the day i was looking forward to! 
Shangri-La's Lemon Garden Cafe is the BEST Breakfast Buffet i ever had.

Round 1 - Meatloaf, Air Dried Beef, Egg Quiche, Sausage, Bake Tomato

















Round 2 - 3 min Egg, Mutton Masala, Green Pea Dhall, Otah, Lemon Chutney

















Round 3 - Siew Mai, Har Kow, Dumplings, Baked Fish, Asparagus and Mushrooms, Roast Duck Wrap

















Round 4 - Wanton Soup

















Round 5 - Feta Cheese, Blue Cheese on Cracker, Edam Cheese, Smoked Salmon, Smoked Fish, Smoked Duck
















Round 6 - Crossaint, Strawberry Danish Pastry, Fresh Strawberries

















Round 7 - Oatmeal with Chopped Walnuts 

















Round 8 - Fruit Cake, Lemon Meringue, Chocolate Donut, Chocolate Cupcake, Fresh Strawberries dipped in Strawberry Chocolate and Dark Chocolate, Yoghurt with chopped Pecan

The food list can just go on and on but it was the max for me. I will strongly encourage you make a trip there to try out this magnificent spread. (That was the only meal i had that day)

Kuala Lumpur Day 4

I must warn you first. This was the worst Hotel Breakfast i ever had. The hotel? Hotel Sentral KL's STARMINT COFFEE HOUSE.

















Which Hotel serves you Processed Beef Burger Patties as thei only meat dish? and the Potatoes are over-done. Omelette was hard and ingredients were miserable.The Bee-hoon? Let's just say that those i eat for breakfast at my workplace taste better.

















Ok, give it some credit. This was the only nice item. Bread Pudding with vanilla sauce.

















Again i had to take the Beef patties as there are nothing much to eat!!! Pity those who can't take Beef. Good Luck man! Luckily, the breakfast was included in our room cost. If it wasn't, even if you pay me, i won't even want to eat.

After Breakfast, we checked out and headed to the highlight of our trip, the Shangri-La Hotel! And in the late afternoon, we proceeded to Bukit Jalil again for the Liverpool game.

















At Bukit Jalil, i saw this pit roasted lamb. thinking of trying it after the match but it was sold out! Must be good.

After the game and another torrid way back to our Hotel, and since its our last night in KL, we went to have a nice dinner. But at that time, most restaurants are already closed. But we saw this pub-restaurant, Atashkadeh still open.
